Ingredients

  • 5 boneless, skinless chicken breast halves
  • 5 slices prosciutto or cooked ham
  • 5 slices swiss cheese
  • 1 2/3 tablespoons butter

Instructions

Pound chicken to 1/8 inch thickness.

Place a slice of prosciutto and a slice of Swiss cheese on each chicken piece. Fold in bottom and sides and roll up. Fasten with toothpicks.

Fry in butter 20-25 minutes, or bread and bake at 350 degrees for 1 hour.

  • 8 oz linguine
  • 2 c fresh or frozen broccoli
  • 2 T butter
  • 1 lb chicken cubed
  • 10 3/4 oz cream of mushroom soup
  • 1/2 c milk
  • 1/2 c grated parmesan cheese
  • 1/4 tsp pepper

Instructions

Cook linguine, adding broccoli for the last 4 minutes. Drain.

Heat butter in skillet. Cook chicken until browned. Add soup, milk, cheese, pepper, and linguine with broccoli. Heat through.

  • 3/4 c cornmeal
  • 1/4 c sugar

  • 1/2 tsps Salt
  • 1 c milk
  • 1/4 c oil
  • 1 egg; beaten

Instructions

Preheat oven to 400 degrees. Grease a 9-inch baking pan.

Combine dry ingredients.

Stir in milk, oil, and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan.

  • 3/4 lb smoked sausage; fully cooked and sliced
  • 1/4 c flour
  • 1/4 cup vegetable oil
  • 1/2 cup onion; chopped
  • 1/2 cup green pepper; chopped
  • 3 green onion
  • 3 1/2 cups Water
  • 1 16-oz package frozen corn
  • 1 1/2 cups ham; cubed
  • 1 14.5-oz can diced tomatoes; undrained
  • 1 cup tomato; fresh, chopped
  • 1 6-oz can Tomato paste
  • 1/4 tsps Salt
  • 1/8 tsps cayenne
  • hot pepper sauce

In a large skillet, cook and stir sausage over medium-high heat until browned; drain well and set aside. In a Dutch oven or soup kettle, cook and stir the flour in oil over medium heat for 5 minutes or until golden brown. Add the onion, green pepper,and green onions; saute until tender.

Stir in the water, corn, ham, tomatoes, tomato paste, salt if desired, cayeene, hot pepper sauce, and sausage. Bring to a boil. reduce heat; cover and simmer for 1 hour, stirring occasionally.

Ingredients

  • 6 oz jumbo pasta shells
  • 1 eggs beaten
  • 16 oz ricotta cheese
  • 1/2 lb mozzarella cheese
  • 4 oz parmesan cheese grated
  • 1/2 T dried parsley
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 lb pasta sauce
  • 4 oz mushrooms sliced

Preheat oven to 350 degrees. Cook pasta in boiling water for 8 to 10 minutes.

Mix eggs, ricotta, half the mozzarella, half the parmesan, parsley, salt, and pepper until combined. Stuff cooked shells with ricotta mixture and place in a 9 by 13 inch baking dish.

Combine pasta sauce, mushrooms, and reserved mozzarella and parmesan. Pour over stuffed shells.

Bake 45 to 60 minutes.

  • 3 1/2 lbs chuck roast

  • 1 pkg onion soup mix
  • 1 T chili powder
  • 1/4 tsp garlic powder
  • 3 T vinegar
  • 2 T worcestershire sauce
  • 2 tsp mustard

Put roast in slow cooker. Mix all sauce ingredients and pour over roast. Cook on high for 8 hours.

Remove meat. Shred with two forks or using paddle attachment on a stand mixer, and then return to sauce. Serve on buns.

  • crushed crackers

Put vegetables into a greased casserole. Mix onion, celery, cheese, and mayonnaise. Spread over vegetables.

  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 3 tablespoons butter melted
  • 3/4 cup all-purpose flour

  • 1 1/4 cups sifted confectioners’ sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

  • 1 cup heavy cream whipped
  • 4 cups sliced strawberries

Place the eggs, milk, water, melted butter, flour, and salt in the pitcher of a blender; blend until smooth.

Heat a lightly oiled griddle or non-stick skillet over medium heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Flip over when the batter is set and the edges are beginning to brown. Cook until the other side begins to brown. Stack finished crepes on a plate, cover with a damp towel and set aside.

Blend the cream cheese, confectioners’ sugar, lemon juice, lemon zest, and vanilla with an electric mixer until smooth. Gently fold in the whipped cream.

To serve, fill each crepe with 1/4 cup sliced strawberries and 1/3 cup of the cream cheese filling, roll up and top with a small dollop of the cream cheese filling and more sliced strawberries.

  • 3/4 tsp chili powder
  • 3/4 c water

Form meat, rice, salt, pepper, water, and onion into meatballs.

Boil together soup, chili powder, and water.

Add meatballs to soup mixture. Cover and simmer for 30-45 minutes, turning 2 or 3 times to cover with sauce.

  • 1.5 c flour
  • 2.0 T milk
  • 1.5 tsp salt

For homemade noodles: Mix eggs with flour, then add milk and salt. Mix in additional flour until the dough can be kneaded. Knead and roll it out. Allow it to stand for 1 to 2 hours, then roll it up and slice it thin. Cook for 10 minutes.

Boil chicken with salt, star anise, and parsley for 1 1/2 to 2 hours.

Boil noodles. (Rinse them first if using homemade noodles.) Drain and rinse with hot water. Strain meat juice onto noodles. Add meat and butter.
