Chocolate Mint Chip Cookies

Ingredients

  • 1 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, room temperature
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon milk
  • 1 cup mint chips
  • ¼ cup milk or semi-sweet chocolate chips

Instructions

Sift together the flour, cocoa powder, baking soda and salt.

Beat the butter on medium speed for 1 minute. Add the white and brown sugars and beat on medium-high speed for 4 minutes until the mixture is light and fluffy. Use a spatula to scrape down the bowl and beaters.

Add the egg and vanilla extract and beat on medium speed for 1 minute until fully incorporated. Scrape the bowl and beaters, then add the flour mixture and beat at low speed just until combined.

Add the milk and beat at high speed until incorporated, about 20 seconds. On the lowest setting, stir in the mint and chocolate chips until evenly distributed throughout the dough.

Cover and chill while the oven preheats, or up to 3 days.

Preheat the oven to 350 degrees.

Scoop 1 ½ tablespoons of dough for each cookie and shape each one into a tall tower (not a flat or round ball).

Bake until the edges are crisp, but the centers still appear soft, about 11 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

These can be shaped into cylinders, frozen on a baking sheet, and then stored in the freezer and baked directly from frozen for 12-13 minutes.

  • 2 eggs; well beaten
  • 1/2 c Shortening
  • 1 c sugar
  • 1/4 tsps Salt
  • 1 tsps baking soda
  • 2 c oatmeal
  • 2 c flour
  • 14 tablespoon milk
  • 1 c raisins

Instructions

Mix eggs, butter, and sugar.

Add dry ingredients and milk alternately.

Bake at 375 degrees for 12-15 minutes.

Ingredients

  • 2 1/2 c flour
  • 1 tsp baking soda
  • 3/4 c butter melted
  • 1 1/2 c brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 c chocolate chips

Instructions

Combine flour and baking soda. Set aside. Combine melted butter with brown sugar. Mix well. Add egg and vanilla and mix until well blended. Add flour mixture and stir just until combined. Stir in chocolate chips.

Drop by tablespoons two and a half inches apart. Bake at 350 degrees for 9 to 11 minutes.

Ingredients

  • 1 cup butter
  • 1 cup shortening
  • 3 cups sugar
  • 4 eggs
  • 5 1/2 cups flour
  • 4 tsp cream of tartar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 4 Tablespoons sugar
  • 4 tsp cinnamon

Instructions

Heat oven to 400 degrees. Mix butter, shortening, sugar, and eggs thoroughly.

Sift flour before measuring. Blend flour, cream of tartar, baking soda, and salt together, and then stir them into the butter mixture.

Mix together sugar and cinnamon. Shape dough into one-inch balls and roll each ball in the cinnamon mixture. Place cookies two inches apart on ungreased baking sheets.

Bake for eight to ten minutes.

Notes

These cookies puff up at first and flatten out when they cool.

  • 3 3/4 c flour
  • 1 1/2 tsps baking soda
  • 2 1/2 tsps ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves

Instructions

Preheat oven to 325 degrees.

Cream together butter and sugar. Stir in eggs, molasses, and vinegar.

Sift together the remaining ingredients and mix in until blended.

Drop by teaspoons onto greased cookie sheets and bake 12 minutes.

Ingredients

  • 1/2 c butter
  • 1/2 c shortening
  • 1 c powdered sugar
  • 1 egg
  • 1 1/2 tsp almond extract
  • 1 tsp vanilla
  • 2 1/2 c flour
  • 1 tsp salt
  • 1/2 tsp red food coloring
  • 1/2 c crushed peppermint candy
  • 1/2 c sugar

Heat oven to 375 degrees. Mix butter, shortening, powdered sugar, egg, and flavorings. Blend in flour and salt. Divide dough in half; blend food coloring into one half.

Take 1 teaspoon of dough from each color. Roll each piece into a 4-inch rope. Place ropes side by side and twist together. Place on an ungreased cookie sheet and turn the top down to form a candy cane shape. Bake 9 minutes. Mix together crushed candy and granulated sugar. Sprinkle cookies with candy mixture immediately after baking.

Ingredients

  • 1 1/4 c flour
  • 1 tsp baking soda
  • 1 c butter
  • 1/4 c sugar
  • 3/4 c brown sugar
  • 1 pkg pudding mix
  • 2 eggs
  • 2 1/2 c oatmeal
  • 2 c chocolate chips
  • 1 c raisins

Instructions

Preheat oven to 375 degrees.

Mix flour and baking soda together.

Combine the butter, sugar, brown sugar, and pudding mix; beat until smooth and creamy. Beat in eggs. Gradually add flour mixture, and then stir in the oats, raisins, and chocolate chips.

Drop by rounded teaspoons onto ungreased baking sheets, about two inches apart.

Bake at 375 degrees for 8-10 minutes.

Notes

To use old-fashioned oats, chop them for a few seconds in a mini food processor before adding to the dough.

  • 1 c sugar
  • 3/8 c butter
  • 2 T cocoa
  • 1/4 c milk
  • 3/8 c peanut butter
  • 1 1/2 c oatmeal
  • 1/2 tsp vanilla

Instructions

Mix together sugar, butter, cocoa, and milk. Boil one minute. Add peanut butter, oatmeal, and vanilla.

Drop on waxed paper. Refrigerate to set.

Ingredients

  • 1 c butter
  • 1 c sugar
  • 1/2 c dark molasses
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 1 tsp ginger
  • 2 eggs
  • 1 tsp vinegar
  • 5 c flour
  • 1 tsp baking soda
  • chocolate chips, cinnamon candies, and/or raisins

Instructions

In a saucepan, cream butter and sugar. Add molasses and spices. Mix well. Bring to a boil, stirring constantly. Remove from heat and cool.

Stir in well-beaten eggs and vinegar. Sift flour and baking soda and stir into molasses mixture to form a smooth dough. Chill several hours.

Divide dough into six portions. Roll out and cut with cookie cutters. Place on baking sheets and decorate with chocolate chips, cinnamon candies, or raisins.

Bake at 350 degrees for 8 to 10 minutes.

Ingredients

  • 1 c sugar
  • 1/2 c shortening
  • 2 eggs
  • 1/2 c milk
  • 1 teaspoon soda
  • 1 teaspoon vanilla
  • 2 teaspoons cream of tartar
  • 3 c flour

Instructions

Boil dates for filling (equal parts dates, sugar, and water, plus 2 tsp tapioca for each cup of dates).

Mix together all ingredients for dough. Roll out thin, fill with date filling, and seal.

Bake at 375 degrees for 12-14 minutes.
