Ham and Bean Soup

Ham and Bean Soup

Ingredients

  • 6 c chicken stock
  • 1 lb dried great Northern beans
  • 1 tablespoon fresh thyme; chopped
  • 1.5 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 3 cloves garlic; chopped
  • 3 stalks celery; cut into 1/2-inch pieces
  • 2 carrots; cut into 1/2-inch pieces
  • 1 onion; cut into 1/2-inch pieces
  • 1 ham bone (about 4 lbs)

Instructions

Stir together chicken stock, Great Northern beans, thyme, salt, pepper, garlic, celery, carrots, and onion in a 5- to 6-quart slow cooker. Place ham bone in the center of mixture; cover and cook on HIGH until beans are tender, about 6 hours.

Remove ham bone; let stand until cool enough to handle.

Remove meat from bone; discard fat, gristle, and bone. Shred meat, and stir into soup.

Ingredients

  • 1 can cream of mushroom soup; or cream of chicken
  • 2 1/4 c diced cooked ham
  • 2 c cooked rice
  • 2 c frozen green beans; or mixed vegetables
  • 1 tsp onion powder

Instructions

Preheat oven to 400 degrees.

Combine all ingredients in a lightly greased casserole dish. Cover and bake for 20 minutes.

Ingredients

  • 2 tsps yeast
  • 1 c Water; warm
  • 2 tablespoon oil
  • 1 tablespoon sugar
  • 1 tsps Salt
  • 3 c flour
  • essence spice
  • garlic powder; or garlic salt
  • dill
  • parmesan; grated
  • 2 tablespoon Butter; melted

Instructions

Mix together the first five ingredients and a third of the flour. Add spices/cheese to taste. Mix in enough flour to handle; knead five minutes. Let the dough rest five minutes.

Divide into 6 pieces and roll each into a circle. Add sauce and toppings to half of each circle, fold the other side over, and crimp together around the edge.

Bake on a Silpat for 15 minutes at 375 degrees. Brush with melted butter and bake for 10 to 15 minutes more.

Ingredients

  • 1 pkg (2 tsp) yeast
  • 1 ½ c hot water (105-115 degrees)
  • 1 c mashed potatoes
  • 2/3 c sugar
  • 2/3 c shortening
  • 2 eggs
  • 1 ½ tsp salt
  • 6 – 7 c flour (can include 3 – 4 c whole wheat)

Instructions

Dissolve yeast in warm water. Stir in potatoes, sugar, shortening, eggs, salt and 3 cups of flour.

Mix in enough of remaining flour to make dough easy to handle. Knead 5 min. Place in greased bowl, cover and refrigerate 8 hrs to 5 days.

Grease muffin pans. (Makes about 48 rolls.) Shape dough into 1-inch balls. Place 3 balls in each muffin cup. Brush with softened margarine or butter. Let rise 1 hour.

To serve immediately: Bake at 400 degrees 15-20 minutes.

For Brown-and-Serve Rolls: Bake at 275 degrees 20 minutes. Refrigerate up to 8 days or freeze up to 2 months. To serve, bake 8-12 min at 400 degrees.

Ingredients

  • 6 slices bread
  • 2 oz Velveeta; sliced
  • 5 oz broccoli; cooked and chopped
  • 1 cup ham; chopped
  • 3 eggs; slightly beaten
  • 1 3/4 cup milk
  • 1 tablespoon dried minced onion
  • 1/4 tsps Salt
  • 1/8 tsps dry mustard
  • cheddar cheese; shredded

Instructions

Cut a doughnut/muffin from each slice of bread and set them aside. Grease and line the bottom of a 8x8 pan with the bread scraps.

Layer sliced Velveeta on top of bread, then broccoli, then ham, then the bread rounds.

Combine eggs, milk, onion, salt, and dry mustard. Pour over bread. Refrigerate 6 hours or overnight.

Bake uncovered for 45 minutes at 325 degrees. Sprinkle with cheddar cheese, bake for five minutes more, and let stand 10 minutes before serving.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup unsalted butter (cold and cut into half inch cubes)
  • 2–4 tablespoons cold water
  • 1 cup half and half
  • 1/4 cup unsalted butter
  • 8 ounces bittersweet chocolate-chopped
  • 1 1/2 cups sugar
  • 3/4 cup cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 eggs
  • 3 egg yolks

To make the crust: In a large bowl whisk together flour, sugar and salt.

Add butter and mix with a fork until it starts to look like a coarse meal.

Add 1 tablespoon of water at the time and continue mixing until a dough forms.

Wrap the dough with the plastic wrap and refrigerate for 2 hours.

Lightly greased 9-inch pie plate and preheat oven to 350 F.

Take the dough from refrigerator and roll out on a lightly floured work surface into a circle about 1/8 inch thick.

Transfer the dough to a pie plate and trim excess of a dough from edges.

To make the filling: In a bowl whisk together sugar, cocoa powder, flour, and salt.

Combine in a sauce pan half and half, butter, and chocolate and stir over a medium-low heat until it become smooth.( Let it cool a few minutes before you add it over dry ingredients and eggs)

Add eggs, egg yolks and chocolate mixture into dry ingredients and stir until well-combined

Transfer filling to pie crust in pan.

Bake 45 to 50 minutes (until the center is set and the edges start to crack)

Cool 10-15 minutes before serving.

Ingredients

  • 5 eggs
  • 1/8 teaspoon Salt
  • 1 tablespoon Butter
  • 1 1/2 tablespoon Butter
  • 1 1/2 tablespoon flour
  • 1/8 teaspoon pepper
  • 7/8 c milk
  • 3/4 c gruyere or swiss cheese; diced
  • 1 teaspoon mustard
  • 16 oz frozen broccoli, corn, and peppers
  • 3 oz ham; diced
  • 1/4 c gruyere or swiss cheese; shredded

Instructions

Beat eggs and salt.

In a skillet, melt 1 T butter. Pour in egg mixture. Cook without stirring, until mixtrue begins to set on the bottom and around the edges. Using a large spoon or spatula, lift and fold partially cooked eggs so uncoooked portion flows underneath. Continue cooking over medium heat about four minutes or until eggs are cooked through but still glossy and moist. Remove from heat and set aside.

For sauce, melt butter. Stir in flour and pepper. Add milk. Cook and stir until thickened and bubbly. Add the 3/4 c cheese and the mustard, stirring until cheese is melted.

Stir vegetables and ham into the cheese mixture, then gently fold in eggs. Turn mixtrue into a baking dish. Cover and chill for 2 to 24 hours.

Bake covered at 350 degrees for 45 minutes, stirring after 15 minutes. After 45 minutes, stir again and sprinkle with shredded cheese. Bake about 5 minutes more or until cheese is melted.

  • cooked ham, chicken, or turkey
  • cubed swiss, cheddar, provolone, or; crumbled bleu cheese
  • hardboiled eggs
  • tomato wedges or cherry tomatoes
  • green pepper sliced

Chop all ingredients and layer or put in separate bowls for each person to assemble their own choices.

  • 12 oz corn
  • 6 potatoes; boiled and mashed
  • 1 lb ground beef

  • onion
  • sage
  • oregano

Instructions

Brown the hamburger with the onion. Add seasonings.

Layer hamburger, gravy, and corn in a 2 1/2 quart casserole. Spread mashed potatoes over the top.

Bake for 45 minutes at 325 degrees.

Ingredients

  • 1/4 c butter
  • 1/4 c chopped onion
  • 1/4 c flour
  • 14 oz chicken broth
  • 12 oz evaporated milk
  • 2 large baked potatoes
  • salt
  • pepper
  • 4 slices bacon
  • 1/2 c shredded cheddar cheese
  • 3 green onions; sliced

Instructions

Melt butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1-2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from one potato; mash. Add pulp to broth mixture.

Cook over medium heat, stirring occasionally, until mixture just comes to a boil. Dice remaining potato skin and potatoes; add to soup. Heat through. Season with salt and pepper. Top each serving with bacon, cheese and green onion.
