  • 4 cups corn

Instructions

Put corn in a greased 1 1/2-qt baking dish and season with salt, pepper, and sugar. Top with bacon.

  • 1 cup cornmeal
  • ¾ cup all-purpose flour

  • 2 eggs, beaten
  • 1 cup milk
  • ¼ cup cooking oil or melted butter

Preheat oven to 400F. Line muffin pan.

In a medium bowl stir together flour, cornmeal, sugar, baking powder, and salt; set aside.

In a small bowl combine eggs, milk, and melted butter. Add egg mixture all at once to flour mixture. Stir just until moistened.

Spoon the batter into 12 greased 2-1/2-inch muffin cups, filling cups two-thirds full.

Bake in the preheated oven about 15 minutes or until light brown and a wooden toothpick inserted near centers comes out clean.

  • 2 tablespoons oil
  • 2 tablespoons chopped onion
  • 1 1/2 cups uncooked white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa

Instructions

Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.

Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

Ingredients

  • 1 tablespoon cornmeal
  • 6 cups all-purpose flour
  • 2 ½ (.25 ounce) packages active dry yeast
  • 1 ½ teaspoons salt
  • 2 cups warm water (110 degrees F/45 degrees C)
  • 1 egg white
  • 1 tablespoon water

Grease a large baking sheet and sprinkle with cornmeal. Set aside.

Combine 2 cups flour, yeast, and salt. Stir in 2 cups warm water; continue adding remaining flour, a little at a time, until incorporated.

Knead dough on a lightly floured surface until smooth and elastic, 8 to 10 minutes. Shape into a ball, place in a greased bowl, and turn once. Cover and let rise in a warm place until doubled in size, about 1 hour.

Punch dough down and divide in half. Turn out onto a lightly floured surface. Cover and let rest for 10 minutes.

Roll each half into a large rectangle. Roll up, starting from a long side. Moisten edge with water and seal. Taper ends.

Place loaves, seam-side down, on the prepared baking sheet. Lightly beat egg white with 1 tablespoon water and brush over loaves. Cover with a damp cloth and let rise until nearly doubled, 35 to 40 minutes.

Preheat the oven to 375 degrees F (190 degrees C).

Use a sharp knife to make 3 or 4 diagonal cuts, about 1/4-inch deep, across top of each loaf. Bake in the preheated oven for 20 minutes. Brush loaves with egg white mixture. Continue baking until an instant-read thermometer inserted into the center reads 190 degrees F (88 degrees C) or loaves sound hollow when tapped, 15 to 20 minutes more. If necessary, cover loosely with foil to prevent over-browning.

Remove loaves from the baking sheet and cool on a wire rack.

  • 1/2 pound medium-size pasta
  • 4 slices bacon; chopped
  • 4 ounces cream cheese; cubed
  • 1 cup frozen peas
  • 3/4 cup milk
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder

Cook pasta as directed on package. Meanwhile, cook bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels.

Add remaining ingredients to reserved drippings; cook on low heat until cream cheese is melted and mixture is well blended and heated through.

Drain pasta; place in large bowl. Add cream cheese sauce and bacon; mix lightly.

  • 2 c sugar snap peas
  • 1/4 c sherry
  • 1 T lemon juice

Combine cornstarch and sugar. Stir in the broth and soy sauce until smooth; set aside.

In a non-stick skillet, saute garlic. Add the carrots, peas, and sherry. Cook over low heat until vegetables are tender, about 10 minutes.

Stir soy sauce mixture and add to vegetables. Bring to a boil. Cook and stir until thickened, about two minutes. Stir in lemon juice.

  • 2/3 cup white sugar

In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.

Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.

Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.

Instructions

Put diced potatoes in salt water with parsley, bay leaf, and onion. Bring to a boil.

For dumplings, mix together egg, salt, and milk, and then add enough flour to make a stiff dough.

When the potatoes start to boil, add dumplings, and boil for 10 minutes.

Ingredients

  • 1 1/3 c warm water
  • 3 T olive oil
  • 4 c flour
  • 1 tsp salt
  • 2 tsp oregano
  • 3 T milk
  • 1 T yeast
  • 1 T parmesan cheese
  • 1/2 T garlic powder
  • 1/2 T garlic salt
  • 1/2 T onion powder
  • 1/2 T oregano
  • 1/8 c olive oil

Instructions

Mix together the water, olive oil, flour, salt, oregano, milk, and yeast like bread dough. Allow it to rise.

Roll the dough out to 1/2 inch thickness on a greased pizza pan or baking sheet. With a pizza cutter, cut into strips that are one inch wide. Allow the dough to rise again.

Stir together the parmesan, garlic powder, garlic salt, onion powder, and oregano.

Brush breadsticks with oil and sprinkle them with the seasoning mixture.

Bake at 350 degrees for 15-20 minutes.

Ingredients

  • 1 c milk
  • 3 T unsalted butter
  • 1/2 c sugar
  • 3 T brown sugar
  • 2 tsp ground cinnamon
  • 3 c flour
  • 1 1/2 tsp yeast
  • 1 tsp salt
  • 2 egg yolks

Instructions

Heat milk and 3 T butter until butter is melted. Let it cool about 20 minutes.

Whisk together sugar, brown sugar, and cinnamon. Put 3 T of this mixture into a large mixing bowl; set the remaining mixture aside.

Whisk flour, yeast, and salt into the 3 T cinnamon sugar mixture.

Add egg yolks to the cooled milk, and then mix the liquid into the dry ingredients. Knead about 8 minutes and form the dough into a smooth ball. Let rise in a greased bowl, covered with plastic wrap, for 60 to 90 minutes (until doubled).

Grease a loaf pan. Pat the dough into an 18-by-7-inch rectangle. Brush dough with water and sprinkle with 1/2 c of the reserved cinnamon sugar, leaving a 2-inch border along one short end. Roll up into a log, ending with the border end and pinching the seam and ends closed. Place loaf seam-side-down in the greased pan.

Cover loaf pan loosely with greased plastic and let the loaf rise at room temperature for 30 to 45 minutes, until the dough is level with the top edge of the pan.

Heat the oven to 350 degrees.

Melt 1 T butter and brush on top of the loaf. Sprinkle with the remaining cinnamon sugar.

Bake for 45 to 55 minutes.

Allow bread to cool in the pan for 15 minutes, then remove and cool completely, about 2 hours.
