Linguine with Summer Succotash

Linguine with Summer Succotash

Ingredients

  • 4 oz linguini
  • 2 ears fresh corn; cut off the cob
  • 1 1/2 tablespoon olive oil
  • 1 cup sugar snap peas
  • 3 oz baby tomatoes; halved
  • 1/2 cup fresh basil
  • 3/8 cup parmesan

Instructions

Cook pasta. Reserve 1 c liquid.

Blend ½ c cooking liquid with ¼ c corn until smooth.

Heat oil in skillet. Add peas and remaining corn. Sprinkle with salt and pepper. Cover and cook about 5 min, stirring often.

Add pasta, tomatoes, basil, cheese, and corn puree. Heat through (about 2 min) adding more liquid if needed.

Serve with additional parmesan cheese.

Ingredients

  • 1/8 c vinegar; mixed with cream
  • 7/8 c cream
  • 2 T sugar
  • 1/4 tsp pepper
  • 1/2 tsp mustard
  • 1 1/2 tsp salt
  • 1 egg beaten
  • 4 potatoes
  • 4 eggs

Instructions

Cut up potatoes and steam for 10 minutes. Chill.

Hard-boil eggs. Slice them and mix in with the potatoes.

Mix mustard with a small amount of the cream mixture in a small saucepan. Gradually add the rest of the cream mixture and then the other ingredients. Heat until almost scalded (first bubble in the middle). Beat up. Pour over potato mixture just before serving.

  • 1/4 c sugar
  • 1 1/2 T salt
  • 4 c hot water
  • 9 cups flour
  • 1 1/2 T yeast
  • 1/3 c shortening

Instructions

Stir salt and sugar together. Pour hot water over, and then stir in about 3 c of the flour, mixed with yeast. Melt shortening and stir it in. Add just enough flour so the dough can be kneaded. Knead for about 10 minutes. Let rise until double, about one hour.

Punch down and let rise again.

Divide into four loaves and put into greased loaf pans. Let rise again.

Bake for 25 minutes at 400 degrees, then reduce temperature to 375 degrees and bake for 20 minutes more.

Ingredients

  • 6 cups green beans
  • 1 cup cooked diced ham
  • 3 T butter
  • 1 T flour
  • 1/2 cup milk
  • 1 can (10 3/4 oz) cream of mushroom soup
  • 4 oz Velveeta, cubed
  • 1 jar (4 oz) pimientos, drained
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup dry bread crumbs

Combine beans and ham.

In a saucepan, melt 1 tablespoon butter. Stir in flour until smooth; add milk gradually. Cook and stir until thickened.

Reduce heat. Add the soup, Velveeta, pimientos, Worcestershire sauce, salt, and pepper. Cook and stir until the Velveeta melts.

Pour soup mixture over the bean mixture. Mix gently to coat.

Transfer to a greased 2-qt baking dish. Bake uncovered at 350 degrees for 40 minutes, stirring once or twice.

Melt the remaining 2 tablespoons of butter and mix in the bread crumbs.

Sprinkle bread crumbs on the beans. Bake 10-15 minutes longer.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1 tablespoon active dry yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1 pinch ground black pepper
  • 1 tablespoon vegetable oil
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 tablespoon grated parmesan cheese
  • 1 cup mozzarella

In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water.

When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place for 20 minutes.

Preheat oven to 450 degrees F (230 degrees C). Punch dough down; place on greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese.

Bake in preheated oven for 15 minutes, or until golden brown. Serve warm.

  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 or 2 bananas, mashed
  • ⅜ cup white sugar
  • 2 T butter, melted
  • 1 egg, lightly beaten
  • --Crumb Topping:--
  • ⅙ cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • ¹⁄₁₆ teaspoon ground cinnamon
  • ½ tablespoon butter

Mix flour, baking soda, baking powder, and salt together in a large bowl.

Beat bananas, white sugar, melted butter, and egg together in a separate bowl.

Stir the banana mixture into the flour mixture just until combined.

Spoon batter into prepared muffin cups, filling each about 3/4 full.

Prepare crumb topping: Mix brown sugar, flour, and cinnamon together in a small bowl. Use a fork to mix in 1 tablespoon butter until mixture is crumbly; sprinkle topping over muffins.

Ingredients

  • ½ c water
  • 1 ½ T butter
  • ⅜ tsp salt
  • 1 c flour
  • 2 eggs
  • 2 oz (½ c) grated Gruyere cheese
  • ⅛ tsp pepper

Preheat oven to 400.

Simmer and whisk water, butter and salt until butter melts. Add flour and stir rapidly with a wooden spoon until it forms a ball; continue until dough is no longer sticky, 1-2 minutes longer. Cool 2-3 minutes.

Beat in eggs one at a time. Stir in cheese and pepper.

Drop by tablespoons onto greased (or parchment-lined) baking sheets.

Bake about 30 minutes until golden brown. Center should be slightly eggy and moist when done.

  • 4 large potatoes; sliced into wedges
  • 4 tablespoon olive oil
  • 2 teaspoon Salt
  • 2 teaspoon garlic powder
  • 2 teaspoon Italian seasoning
  • 1/2 cup parmesan; shredded
  • fresh parsley; optional

Instructions

Preheat oven to 375. Lightly grease a large baking sheet and set aside. Place potato wedges in a large bowl. Drizzle with olive oil and toss to coat. In a small bowl whisk together salt, garlic powder, and Italian seasoning. Sprinkle potato wedges with the shredded cheese, tossing to coat, then sprinkle with the seasoning mixture. Place potato wedges on prepared baking sheet in a single layer with skin-sides-down.
