Ingredients

  • 1 cup cornmeal
  • ¾ cup all-purpose flour
  • 2 - 4 tablespoon sugar
  • 2 ½ teaspoon baking powder
  • ¾ teaspoon salt
  • 2 eggs, beaten
  • 1 cup milk
  • ¼ cup cooking oil or melted butter

Instructions

Preheat oven to 400F. Line muffin pan.

In a medium bowl stir together flour, cornmeal, sugar, baking powder, and salt; set aside.

In a small bowl combine eggs, milk, and melted butter. Add egg mixture all at once to flour mixture. Stir just until moistened.

Spoon the batter into 12 greased 2-1/2-inch muffin cups, filling cups two-thirds full.

Bake in the preheated oven about 15 minutes or until light brown and a wooden toothpick inserted near centers comes out clean.

Ingredients

  • 2 eggs; well beaten
  • 1/2 c Shortening
  • 1 c sugar
  • 1/4 tsps Salt
  • 1 tsps baking soda
  • 2 c oatmeal
  • 2 c flour
  • 14 tablespoon milk
  • 1 c raisins

Instructions

Mix eggs, butter, and sugar.

Add dry ingredients and milk alternately.

Bake at 375 degrees for 12-15 minutes.

Cinnamon Swirl Bread

Ingredients

  • 1 c milk
  • 3 T unsalted butter
  • 1/2 c sugar
  • 3 T brown sugar
  • 2 tsp ground cinnamon
  • 3 c flour
  • 1 1/2 tsp yeast
  • 1 tsp salt
  • 2 egg yolks

Instructions

Heat milk and 3 T butter until butter is melted. Let it cool about 20 minutes.

Whisk together sugar, brown sugar, and cinnamon. Put 3 T of this mixture into a large mixing bowl; set the remaining mixture aside.

Whisk flour, yeast, and salt into the 3 T cinnamon sugar mixture.

Add egg yolks to the cooled milk, and then mix the liquid into the dry ingredients. Knead about 8 minutes and form the dough into a smooth ball. Let rise in a greased bowl, covered with plastic wrap, for 60 to 90 minutes (until doubled).

Grease a loaf pan. Pat the dough into an 18-by-7-inch rectangle. Brush dough with water and sprinkle with 1/2 c of the reserved cinnamon sugar, leaving a 2-inch border along one short end. Roll up into a log, ending with the border end and pinching the seam and ends closed. Place loaf seam-side-down in the greased pan.

Cover loaf pan loosely with greased plastic and let the loaf rise at room temperature for 30 to 45 minutes, until the dough is level with the top edge of the pan.

Heat the oven to 350 degrees.

Melt 1 T butter and brush on top of the loaf. Sprinkle with the remaining cinnamon sugar.

Bake for 45 to 55 minutes.

Allow bread to cool in the pan for 15 minutes, then remove and cool completely, about 2 hours.

  • 8 oz cream cheese
  • 8 oz sour cream
  • 2 T green onion, finely chopped (1 piece)
  • 2 T fresh dill
  • 1/2 tsp seasoned salt
  • fresh vegetables, crackers, or chips

Instructions

Beat together the cream cheese, sour cream, green onion, dill, and salt, until fluffy.

Cover and chill for 1 to 24 hours.

If the dip is too thick after chilling, stir in 1-2 T milk.

Serve with vegetables, crackers, or chips.

Ingredients

  • 4 eggs
  • 2 c sugar
  • 1 1/2 c oil
  • 15-16 oz pumpkin (2 c)
  • 1 tsp salt
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 T cinnamon
  • 3 c flour

Instructions

Beat together all the ingredients except the flour until smooth. Then add the flour. Fill greased muffin tins two-thirds full. Sprinkle the tops of the muffins with brown sugar.

Bake at 375 degrees for 15 minutes.

Ingredients

  • BREAD
  • 2 cups rhubarb , cut into 1/2 inch pieces
  • 1 cup white granulated sugar , divided
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter , softened
  • 2 large eggs
  • 3 very ripe bananas , mashed
  • 1/4 cup sour cream
  • 1 tsp vanilla
  • --------------------
  • GLAZE:
  • 3/4 cup icing sugar
  • 3 tbsp milk
  • 1/4 tsp cardamom

Preheat oven to 350°F and grease a loaf pan, setting aside.

In a medium sized bowl, mix the rhubarb with 1/2 cup of the sugar, coating evenly. Set aside.

In another medium sized bowl,mix together flour, baking powder, baking soda, cinnamon and salt. Set aside.

In a large bowl, cream the butter and remaining 1/2 cup sugar together. Beat in the eggs, then mashed bananas, sour cream and vanilla. Stir in the dry ingredients until fully mixed together, then fold in the rhubarb.

Pour into loaf pan and bake for 1 hour 10 minutes, or until when inserting a toothpick it comes out clean.

For the glaze, in a medium sized bowl, whisk together the icing sugar, milk and cardamom.

Allow bread to cool for at least 20 minutes prior to pouring glaze over top. Slice and serve.

  • pie crust
  • 1 egg, beaten
  • 3/4 c cream
  • 2 tsp parmesan
  • 2 T sauteed mushrooms or crab meat
  • 1/2 tsp salt
  • 1 pinch coriander

Instructions

Shape pie crust into tiny tarts in a muffin pan. Bake 5 minutes at 400 degrees.

Lower heat to 325 degrees. Fill each tart with about 1 T of the quiche mixture. Bake for 15 to 25 minutes.

Ingredients

  • 1/2 cup Butter
  • 1 cup cheddar cheese; grated
  • 1 cup flour
  • 1 cup rice krispies
  • 6 shakes tabasco

Mix all ingredients together and form mixture into 1-inch balls. Mash with the tines of a fork. Imprint with the fork in the opposite direction to form a crisscross pattern. Bake at 400 degrees for 10 minutes. Cool on a wire rack.

Best when served fresh, but they may also be placed in an air-tight container and frozen.

  • 1 c mashed potatoes
  • 2 tablespoon cream
  • 1/2 c flour
  • 1/4 tsps Butter

Mix all ingredients together.

Divide into 1/4 - cup balls. Roll out in flour and fry on a griddle until there are light brown spots.

Ingredients

  • 1 lb potatoes
  • 1 T salt
  • ½ c butter
  • 3 eggs
  • 4 ½ c flour
  • ½ c warm water
  • 2 T yeast
  • 2 T sugar
  • -----Filling:-----
  • 2 ⅔ c brown sugar
  • 2 ½ T cinnamon
  • 3 T flour
  • 9 T butter, room temperature
  • -----Glaze:-----
  • 2 c powdered sugar
  • ¼ c butter, melted
  • 2 T milk
  • 1 tsp vanilla
  • ⅛ tsp salt

Instructions

Peel potatoes and cut into 2-inch pieces. Boil with 2 c water and 1 T salt until very tender. Mash with water in pan – don’t drain. Add butter and mash until melted. Whisk in eggs, then 1 c flour, and mash until very smooth. Let stand until barely lukewarm, about 10 minutes.

Meanwhile, combine warm water, yeast, and sugar. Let stand about 10 minutes. Add potato mixture to yeast mixture, then add about 3 c flour (1 c at a time) and knead 8 minutes. Proof for an hour in a buttered bowl covered with plastic wrap and a kitchen towel.

Combine all filling ingredients. Roll out dough to a 24 x 16-inch rectangle and sprinkle filling over dough. Roll up and cut into 12 pieces. Place about ¾ inch apart on baking sheet. Cover loosely with plastic wrap and let rise until double, about 20 minutes.

Bake for 20 minutes at 425 degrees. Cool for 10 minutes. Whisk together ingredients for glaze (add more milk if too thick) and spread over warm rolls.
