Ingredients

  • olive oil
  • 4 chicken thighs
  • 2 tsp coarse salt
  • 1 1/2 tsp thyme
  • 1 tsp pepper
  • 1/4 tsp nutmeg
  • potatoes
  • carrots

Instructions

Preheat oven to 450 degrees.

Coat a baking dish with oil. Place the chicken pieces in the dish and turn them to coat them with oil. Mix the spices and sprinkle half the mixture over the chicken. Cover and roast for 30 minutes.

Cut unpeeled potatoes and peeled carrots into spears about 1/2 inch thick and two inches long. Drizzle with oil and mix with the remaining spices. Set aside the chicken. Bake the carrots and potatoes in the same dish for 30 minutes, turning to coat with drippings.

Place chicken on carrots and potatoes. Pour juices from the chicken over them. Roast 15 minutes longer.

Ingredients

  • 4 oz linguini
  • 2 ears fresh corn; cut off the cob
  • 1 1/2 tablespoon olive oil
  • 1 cup sugar snap peas
  • 3 oz baby tomatoes; halved
  • 1/2 cup fresh basil
  • 3/8 cup parmesan

Instructions

Cook pasta. Reserve 1 c liquid.

Blend ½ c cooking liquid with ¼ c corn until smooth.

Heat oil in skillet. Add peas and remaining corn. Sprinkle with salt and pepper. Cover and cook about 5 min, stirring often.

Add pasta, tomatoes, basil, cheese, and corn puree. Heat through (about 2 min) adding more liquid if needed.

Serve with additional parmesan cheese.

Ingredients

  • 3 T butter
  • 3 T flour
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 can chicken broth
  • 6 pork chops
  • 6 c potatoes, thinly sliced
  • 1 medium onion, sliced
  • paprika
  • parsley

Instructions

Melt butter in a saucepan. Add flour, salt, and pepper, and chicken broth. Bring to a boil, stirring. Cook one minute and set aside.

Brown pork chops in oil; season with salt and pepper.

Layer pork chops, potatoes, and onion in a greased 9x13 pan. Pour broth mixture over the top.

Cover and bake 1 hour. Uncover and bake 30 minutes. Sprinkle with paprika and parsley.

  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1/4 teaspoon salt

Ingredients

  • 2 racks of pork baby back ribs
  • ¼ cup dark brown sugar
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons dry mustard powder
  • 4 teaspoons smoked paprika
  • 1½ tablespoons kosher salt
  • 4 teaspoons black pepper, freshly ground
  • 2 tablespoons vegetable oil
  • 2 cups barbecue sauce (homemade or store-bought)

Pat the ribs dry with a paper towel. Remove any silver skin or membrane from the ribs.

Combine the dark brown sugar, garlic powder, onion powder, dry mustard powder, smoked paprika, salt, and pepper in a bowl. Mix well. Add the vegetable oil and mix until you form a paste. Rub the ribs all over with the spice paste.

Wrap the ribs in foil packets, sealing the edges, making sure the ribs are completely sealed inside.

Bake on a baking sheet in the oven at 275 degrees for 2 hours and 30 minutes.

Finishing on the grill: Remove the ribs from foil packets, being careful to reserve the juices. Add the juices to the barbecue sauce and mix well. Place the ribs on a preheated grill and baste with the sauce for about 20 minutes or until the ribs are beginning to fall off the bone.

Finishing in the oven: Cut the foil packets open using kitchen shears and carefully fold back the foil to expose the ribs. Liberally coat the ribs with barbecue sauce. Turn the oven up to 400°F and return the ribs to the oven without rewrapping them. Cook for about 25 minutes or until the ribs begin to fall off the bone.

Ingredients

  • 1 can prego spaghetti sauce
  • 8 oz cottage cheese
  • 2 pkg mozzarella; sliced
  • 2 lbs hamburger
  • 1 onion
  • 1 c parmesan cheese
  • 6 piece lasagna noodle

Brown hamburger with onion.

Cook noodles. Drain and cool with cold water.

Grease a 9x13 inch pan. Cover the bottom with noodles, then layer on half the sauce, all the hamburger and cottage cheese, and half the mozzarella and parmesan cheese. Then add another layer of noodles and the remaining sauce, mozzarella, and parmesan cheese.

Cover and bake 1 hour to 1 1/4 hours at 400 degrees.

Ingredients

  • 1 egg white
  • 1 T dry sherry
  • 1 tsp salt
  • 1/8 tsp white pepper
  • 1 tsp cornstarch
  • 2 half-breasts chicken
  • 1/2 c peanut oil
  • 1 c roasted cashews (4 oz)
  • 1 piece green onion; chopped
  • 1 piece green or red pepper; cut into squares
  • 1 c canned sliced bamboo shoots (8 oz)
  • 1 T dry sherry
  • 1 T soy sauce
  • 1 tsp sugar
  • 1 tsp cornstarch mixed with 1 t water
  • rice

Cook rice.

Beat egg white lightly with a fork and mix in 1 T sherry, salt, pepper, and cornstarch. Slice chicken into 1-inch slices, add to egg white mixture, and turn pieces to coat them.

Heat 3 T oil in a wok or skillet over high heat. Add chicken and stir-fry until golden. Remove from heat.

Heat 3 T oil and fry cashews gently until golden-brown. Remove with a slotted spoon and drain on paper towels.

Add remaining oil to pan, heat, and stir-fry green onion, green pepper, and bamboo shoots for 1 minute. Add remaining tablespoon of sherry with soy sauce, sugar, and cornstarch mixed with water. Stir until thickened. Add chicken, turn to coat with sauce, and heat through. Sprinkle with cashews and serve over rice.

Ingredients

  • 4 cups water
  • 2 tablespoon sugar
  • 6 1/2 tsp salt
  • 2 chicken breasts
  • 1 1/2 cups dry bread crumbs
  • 3 tablespoon olive oil
  • 2 eggs
  • 2 tablespoon flour
  • 2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper

Preheat oven to 400 degrees. Grease a cooking rack and place it in a roasting pan.

Combine water, sugar, and 2 T salt and whisk under sugar and salt are dissolved.

Cut each chicken breast into 9 pieces. Add the chicken to the brine mixture and let it sit for 15 minutes.

Combine panko and oil. Heat in the microwave for 2-3 minutes, stopping every 30 seconds to stir.

Whisk together eggs, flour, onion powder, garlic powder, pepper and 1/2 tsp salt.

Remove chicken pieces from brine, drain on paper towels.

Pat dry, dredge in egg mixture and roll in bread crumbs.

Bake on the cooking rack for 15-20 minutes.

Ingredients

  • 2 T flour
  • 12 oz cubed stew meat (beef or pork)
  • 2 T oil
  • 3 c vegetable juice
  • 1 c water
  • 1 c onion wedges
  • 1 T worcestershire sauce
  • 2 tsp beef bouillon
  • 1 tsp oregano
  • 1/2 tsp marjoram
  • 1/4 tsp pepper
  • 1 bay leaf
  • 3 c potatoes; cubed
  • 1 1/2 c frozen green beans or 1 pt canned g; reen beans
  • 1 c frozen corn
  • 2 carrot; sliced

Coat meat cubes with flour and brown in oil. Stir in vegetable juice, water, onion, Worcestershire sauce, bouillon, and herbs. Cover and simmer for 1 to 1 1/4 hours.

Add potatoes, beans, corn, and carrots. Simmer for 30 minutes.

OR --- Slow cooker: Brown meat, then combine all ingredients in the slow cooker and cook on low for 10 to 12 hours or on high for 5 to 6 hours.

Ingredients

  • 1/4 cup maple syrup
  • 2 T balsamic vinegar
  • 2 T soy sauce
  • 2 limes
  • 2 garlic cloves
  • salmon fillets

Instructions

Squeeze the juice from one of the limes and cut the other into wedges. Combine maple syrup, balsamic vinegar, soy sauce, lime juice, and garlic in a small saucepan.

Sprinkle an even layer of salt and pepper (about 1/4 tsp each) in a nonstick skillet. Place salmon fillets skin-side-down in the skillet, and sprinkle them with more salt and pepper.

Cook salmon over medium heat until the fat begins to puddle around the fillets, about 7 minutes.

Turn salmon fillets over and cook (without moving them) to an internal temperature of 125 degrees, about 7 minutes more.

Transfer fillets to a serving platter, cover with foil, and keep warm.

Cook glaze over medium heat until thick and syrupy, about 5 minutes, stirring occasionally.
