So-Easy Barbecue Chicken (or Pork Chops)

Ingredients

  • 1/4 c butter
  • 1 pkg dry onion soup mix
  • 1 c hickory flavored barbecue sauce
  • chicken breast halves or pork chops; one per person

Instructions

Melt butter. Mix together the onion soup mix and barbecue sauce, and then combine with the melted butter.

Baste chicken pieces (or pork chops) on both sides.

Continue basting while grilling, or bake uncovered in the remaining sauce at 350 degrees for one hour, or cook in a slow cooker on low for 4-6 hours.

Ingredients

  • 2 lbs ground beef
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sage
  • 1/2 tsp rosemary
  • 1 c oatmeal
  • 1 c milk
  • 1/2 c onion; chopped
  • 1/2 c green pepper; chopped
  • 1 carrot; grated

Instructions

Mix together all ingredients and put into loaf pan. Bake 1 1/4 hours at 350 degrees.

Top with barbecue sauce or a mixture of catsup and molasses, and bake for 15 minutes longer.

Ingredients

  • 2 T olive oil divided
  • 2 chicken breast halves cubed
  • 1 carrot sliced
  • 10 oz frozen broccoli
  • 2 cloves garlic
  • 6 oz angel hair pasta
  • 2/3 c chicken broth
  • 1 tsp basil
  • 1/4 c parmesan cheese

Instructions

Cook chicken in 1T oil about 5 minutes. Remove and drain on paper towels.

Cook carrot 4 minutes in remaining 1 T oil.

Add broccoli and garlic; cook 2 minutes longer.

Cook pasta. Meanwhile, add broth, basil, and parmesan to the skillet. Return chicken to skillet and simmer for 4 minutes.

Drain pasta; top with chicken mixture.

  • 1 egg
  • 1 c flour
  • 3/4 c milk
  • 2 T shortening, melted
  • 1 T sugar
  • 1 T baking powder
  • 1/2 tsp salt
  • 1/2 c blueberries (fresh or frozen)

Instructions

Preheat griddle. Beat egg, then beat in other ingredients except blueberries.

Add batter to the griddle and then add a few blueberries to each pancake.

Ingredients

  • 2 lbs ground beef
  • 1 c oats
  • 1/4 c onion; chopped
  • 2 tsp salt
  • 1 1/3 c tomato juice
  • 1 egg
  • 1/4 c ketchup
  • 2 T brown sugar
  • 1/2 tsp mustard

Instructions

Combine all ingredients except ketchup, brown sugar, and mustard. Pack firmly into an ungreased loaf pan.

Mix the ketchup, brown sugar, and mustard, and spread this sauce over the meat. Bake in a preheated oven at 350 degrees for 1 hour and 15 minutes. Let stand 5 minutes before slicing.

Ingredients

  • 1 lb orange roughy; fresh or frozen
  • 1/4 c milk
  • 1/3 c flour
  • 1/3 c fine dry bread crumbs
  • 1/4 c parmesan; grated
  • 1/2 tsps dried dill
  • 1/8 tsps pepper
  • 2 tablespoon Butter; melted

Thaw fish, if frozen. Finse and pat dry with paper towels. Cut into serving size pieces and measure the thickness of each piece.

Place milk in a shallow dish. Place flour in another shallow dish. In a third shallw dish combine bread crumbs, Parmesan cheese, dill, and pepper. Add melted butter and stir until combined.

Dip fish in the milk, then flour, then milk again, then bread crumbs. Place on a greased baking sheet.

Bake uncovered at 450 degrees for 4-6 minutes per half-inch of thickness, or until fish flakes easily when tested with a fork.

Ingredients

  • 2 large onions, sliced
  • 5 lb pork shoulder roast
  • 2 T roasted garlic and herb seasoning
  • 1 tsp salt
  • 2 c chicken broth

Instructions

Grease slow cooker. Place onions in the bottom.

Rub seasoning blend and salt into the pork roast. Place it on top of the onions and pour chicken broth over it.

Cover and cook on low for 10 hours.

  • 1 lb bottom round steak
  • 1 T shortening
  • 1/2 c water
  • 10 3/4 oz cream of mushroom soup
  • 4 oz mushrooms
  • 1 3/8 oz onion soup mix

Instructions

Mix flour, salt, and pepper. Pound into beef. Cut beef into 4-6 pieces.

Brown beef in shortening for 15 minutes.

Add remaining ingredients. Cover and simmer for 45 minutes.

Ingredients

  • 4 spears asparagus per serving
  • 4 slices shaved deli ham per serving
  • 2 Tablespoons butter per serving, melted
  • 1/4 cup grated parmesan per serving

Instructions

Steam asparagus five minutes.

Wrap each spear in a slice of ham.

Arrange seam sides down, close together, in a shallow baking dish greased with a little of the butter. Sprinkle with half the remaining butter, then the cheese, then the rest of the butter.

Bake 10 min at 450 degrees.

  • 2 c chicken; cooked
  • 1 c mushrooms; sauteed
  • 1/3 c green peppers; sauteed
  • 6 T butter
  • 6 T flour
  • 1 1/2 c evaporated milk (1 can)
  • 1 1/2 c chicken broth
  • rice or puffed pastry

Instructions

Melt butter and slowly blend in flour. Add evaporated milk and chicken stock. Season to taste. Add chicken, mushrooms, and green pepper. Serve over rice or puffed pastry.
