Sugar and Spice Pear Pie

Ingredients

  • 5 large pears, peeled and sliced
  • 3/4 cup sugar
  • 1/4 cup orange juice
  • 4-1/2 teaspoons quick-cooking tapioca
  • 1 tablespoon grated lemon zest
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon minced fresh gingerroot
  • Pastry for double-crust pie (9 inches)
  • 1/2 cup chopped pecans
  • 1/4 cup packed brown sugar
  • 3 tablespoons butter

Instructions

Preheat oven to 400°. In a large bowl, combine first nine ingredients. Let stand 15 minutes.

Line a 9-in. pie plate with bottom crust; trim pastry even with edge. Sprinkle with pecans and brown sugar; fill with pear mixture. Dot with butter. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry.

Bake 40-45 minutes or until crust is golden brown and filling is bubbly. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack.

Notes

Ingredients

  • --- Cake ---
  • 2 ¼ c sugar
  • 1 ½ c butter
  • 6 eggs
  • 1 ½ tsp vanilla
  • ¾ tsp almond extract
  • 3 ¾ c flour (can use up to 2 c whole wheat flour)
  • 2 ¼ tsp baking powder
  • 21 oz cherry pie filling
  • --- Topping ---
  • ⅔ c chopped pecans
  • ⅔ c oatmeal
  • 3 T brown sugar
  • 3 T butter
  • 1 ½ tsp cinnamon

Instructions

Cream sugar and butter. Add eggs, vanilla, and almond extract. Add flour and baking powder and mix just until moistened.

Pour into greased 9x13 pan. Top with cherry filling, poking cherries gently down into the batter.

Combine all topping ingredients and sprinkle on top.

Bake 60-70 minutes (until toothpick comes out clean) at 350 degrees.

Ingredients

  • 1 c butter
  • 2 c sugar
  • 4 oz bittersweet chocolate
  • 3 eggs
  • 1 tsp vanilla
  • ¾ c flour
  • ¼ c cocoa
  • ¼ tsp salt
  • 1 c walnuts

Preheat the oven to 350 degrees. Butter and flour a 9x13 pan. Melt chocolate and cool.

Soften butter and whisk until it is pale yellow and light. Add the sugar and whisk until light and fluffy. Whisk in cooled chocolate, then add eggs one at a time. Whisk in the vanilla, then sift in the flour, cocoa, and salt. Fold in the nuts.

Transfer batter to a prepared baking pan and bake about 30 minutes.

Ingredients

  • 7 oz marshmallow crème
  • 8 oz cream cheese
  • 2 T orange juice concentrate, thawed
  • 1 c pumpkin puree
  • ¼ c maple syrup
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ c chopped toasted pecans
  • ¼ c crushed gingersnaps

Instructions

Combine the marshmallow crème, cream cheese, and 1 T orange juice concentrate and beat until smooth. Stir together the pumpkin, syrup, cinnamon, nutmeg, and 1 T orange juice in a separate bowl. Fold ¼ c of the marshmallow crème mixture into the pumpkin mixture.

Layer in four parfait glasses by 3 T amounts, starting with the cream cheese mixture. Chill 2 hours. Top with pecans and gingersnaps just prior to serving.

  • 3/4 c butter
  • 2 c sugar
  • 2 eggs; beaten
  • 1/2 c molasses
  • 2 tsps vinegar
  • 3 3/4 c flour
  • 1 1/2 tsps baking soda
  • 2 1/2 tsps ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves

Instructions

Preheat oven to 325 degrees.

Cream together butter and sugar. Stir in eggs, molasses, and vinegar.

Sift together the remaining ingredients and mix in until blended.

Drop by teaspoons onto greased cookie sheets and bake 12 minutes.

  • 15 Oreo Cookies; crushed
  • 1/4 cup Butter; melted
  • 1 cup milk; cold
  • 1 pkg (4 oz) chocolate pudding mix (instant)
  • 2 cups vanilla ice cream; softened
  • Cool Whip
  • chocolate curls

Combine cookie crumbs and butter; mix well and press into pie plate.

Beat milk and pudding mix on low speed for 2 minutes. Fold in ice cream. Spoon into crust. Cover and freeze 4 hours.

Remove 15 minutes before serving. Garnish with whipped topping and chocolate curls.

  • 1 ½ oz unsweetened baking chocolate
  • ¼ c butter
  • ½ c boiling water
  • 1 c brown sugar
  • 1 c flour
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 egg
  • ¼ c sour cream
  • ½ tsp vanilla

Instructions

Combine chocolate, butter, and boiling water and stir until chocolate and butter are melted.

Combine brown sugar, flour, baking soda, and salt. Gradually add chocolate mixture and blend well.

Add egg, sour cream, and vanilla; beat 1 minute on medium speed.

Grease and flour 8” or 9” square pan and pour batter in. Bake at 350 degrees for 30-35 minutes.

  • 1 c mashed potatoes
  • 2 tablespoon cream
  • 1/2 c flour

Divide into 1/4 - cup balls. Roll out in flour and fry on a griddle until there are light brown spots.

  • 1/2 c brown sugar
  • 2 tsp cinnamon
  • 2 T flour
  • 2 T butter, melted
  • 1/2 c chopped walnuts
  • 1 1/2 c flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 3/4 c sugar
  • 1/4 c shortening
  • 1 egg
  • 1/2 c milk
  • 1 tsp vanilla

Instructions

In a small bowl, mix together brown sugar, cinnamon, flour, butter, and walnuts.

In a different bowl, sift flour, baking power, salt, and sugar. Cut in shortening.

Beat egg and mix with milk; add the liquid to the dry ingredients.

Spread half the batter in a greased 8x8 pan. Sprinkle with half the nut mixture. Add remaining batter and remaining nutty filling.

Bake at 375 degrees for 35 minutes.

Ingredients

  • 1 lb potatoes
  • 1 T salt
  • ½ c butter
  • 3 eggs
  • 4 ½ c flour
  • ½ c warm water
  • 2 T yeast
  • 2 T sugar
  • -----Filling:-----
  • 2 ⅔ c brown sugar
  • 2 ½ T cinnamon
  • 3 T flour
  • 9 T butter, room temperature
  • -----Glaze:-----
  • 2 c powdered sugar
  • ¼ c butter, melted
  • 2 T milk
  • 1 tsp vanilla
  • ⅛ tsp salt

Peel potatoes and cut into 2-inch pieces. Boil with 2 c water and 1 T salt until very tender. Mash with water in pan – don’t drain. Add butter and mash until melted. Whisk in eggs, then 1 c flour, and mash until very smooth. Let stand until barely lukewarm, about 10 minutes.

Meanwhile, combine warm water, yeast, and sugar. Let stand about 10 minutes. Add potato mixture to yeast mixture, then add about 3 c flour (1 c at a time) and knead 8 minutes. Proof for an hour in a buttered bowl covered with plastic wrap and a kitchen towel.

Combine all filling ingredients. Roll out dough to a 24 x 16-inch rectangle and sprinkle filling over dough. Roll up and cut into 12 pieces. Place about ¾ inch apart on baking sheet. Cover loosely with plastic wrap and let rise until double, about 20 minutes.

Bake for 20 minutes at 425 degrees. Cool for 10 minutes. Whisk together ingredients for glaze (add more milk if too thick) and spread over warm rolls.
