Molten Chocolate Cake with Candied Walnuts

Ingredients

  • 6 oz semisweet chocolate
  • 2 oz bittersweet chocolate
  • 3/4 cup unsalted butter
  • 3 egg yolks
  • 3 eggs
  • 3/4 cup sugar
  • 3/4 cup flour
  • 3 cups walnuts; toasted
  • 1 3/4 cup sugar
  • 1 pinch kosher salt

Instructions

For the Cake: Butter 8 six-ounce ceramic ramekins and dust with flour.

In a bowl over a double-boiler melt the butter and chocolate, set aside and let cool.

In a mixing bowl, use electric mixer to combine eggs and sugar until pale yellow butter holds shape and forms ribbon on beaters. Blend flour into egg-sugar mixture with the mixer for 3 minutes. Add chocolate mixture, being careful to incorporate everything; mix for 2 more minutes.

Pour about 6 ounces of batter into each ramekin and refrigerate for 1 hour.

In a preheated 475°F (245°C) oven, bake ramekins on a cookie sheet for 10 to 12 minutes or until they are puffed up and don't jiggle when moved.

Remove from oven and serve immediately.

For the Walnuts: Cook sugar until melted and slightly amber colored. Mix walnuts, sugar and salt together; being sure to coat the nuts. Cool on a non-stick surface such as a Silpat or bakers paper.

Notes

Can be served with chocolate sauce or whipped cream.

Ingredients

  • 1 quart canned carrot slices (or 4 c cooked carrots)
  • 1 medium onion; diced
  • 1 tablespoon Butter
  • 1 10.75-oz can cream of celery soup
  • 2/3 c Velveeta; cubed

Instructions

Saute onion in butter until tender. Add soup and cheese; stir until smooth.

Drain carrots and combine with cheese mixture in a 1-quart baking dish.

Cover and bake at 350 degrees for 15 to 20 minutes or until heated through.

Ingredients

  • 1 1/2 cups chopped dates
  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 1 Tbs quick tapioca
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 1/2 cups butter
  • 2/3 cup sour milk
  • 1 tsp soda
  • 3 cups flour
  • 3 cups quick oatmeal
  • 2 tsp vanilla

For date filling, boil together until thick: dates, sugar, water, and quick tapioca.

Mix brown sugar, white sugar, and butter. Add vanilla and soda to the milk. Add milk and flour alternately to the sugar mixture. Add oats. Refrigerate overnight.

Roll our a small amount of dough 1/8 inch thick. Cut with a four-inch cookie cutter. Spread filling on half the round, fold the other half over, and press the edges together.

Bake on ungreased cookie sheets at 325 degrees for 10 minutes.

Ingredients

  • 6 slices bread
  • 2 oz Velveeta; sliced
  • 5 oz broccoli; cooked and chopped
  • 1 cup ham; chopped
  • 3 eggs; slightly beaten
  • 1 3/4 cup milk
  • 1 tablespoon dried minced onion
  • 1/4 tsps Salt
  • 1/8 tsps dry mustard
  • cheddar cheese; shredded

Cut a doughnut/muffin from each slice of bread and set them aside. Grease and line the bottom of a 8x8 pan with the bread scraps.

Layer sliced Velveeta on top of bread, then broccoli, then ham, then the bread rounds.

Combine eggs, milk, onion, salt, and dry mustard. Pour over bread. Refrigerate 6 hours or overnight.

Bake uncovered for 45 minutes at 325 degrees. Sprinkle with cheddar cheese, bake for five minutes more, and let stand 10 minutes before serving.

Ingredients

  • 1 package (3.4 oz) vanilla pudding mix (instant)
  • 1 c buttermilk
  • 1 package (8 oz) Cool Whip
  • 1 can pineapple tidbits
  • 1 can (11 oz) mandarin orange
  • 1/2 package (11.5 oz) fudge-striped cookies

Instructions

In a large bowl, mix together the dry pudding mixes and buttermilk.

Fold in the Cool-Whip.

Stir in the pineapple and mandarin oranges until incorporated.

Break cookies into bite-size pieces and gently fold into salad mixture.

Serve immediately. If preparing ahead of time, add cookies right before serving.

  • 1 T butter
  • 1 T flour
  • 1/3 c milk
  • 1/8 c shredded swiss cheese
  • 1 T parmesan cheese
  • 1/8 tsp salt
  • 1/8 tsp nutmeg
  • 1/8 tsp pepper
  • 1 oz pork sausage
  • 1 egg
  • 1/8 tsp thyme
  • 1/4 tsp parsley
  • 8 sheets phyllo dough
  • 3 T butter
  • 2 T dry bread crumbs
  • 1 T parmesan cheese

Instructions

Melt butter, stir in flour until smooth, and gradually add milk. Boil and stir 2 minutes until thickened. Add cheese, salt, nutmeg, and pepper. Cook and stir until cheese is melted. Cook sausage. Add beaten egg and thyme; cook and stir until egg is set. Combine with cheese sauce and parsley. Cool completely.

Place one sheet of phyllo dough on waxed paper. Brush with butter and sprinkle with bread crumbs. Fold over lengthwise and brush with butter again. Spread about 2T of the egg mixture along the short side of the dough and roll it up.

Brush each roll with butter and sprinkle with parmesan cheese and parsley.

Bake for 15 minutes at 350 degrees.

Ingredients

  • 3 medium pears (1 1/2 cups chopped)
  • 1 cup whole wheat flour
  • 1 cup white all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp table salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp powdered ginger
  • 2/3 cup buttermilk
  • 6 tbsp unsalted butter, melted and cooled
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 3 tbsp unsalted butter, softened
  • 1/3 cup whole wheat flour
  • 1/2 cup pecans, finely chopped
  • 2 tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp powdered ginger
  • 1/4 tsp table salt

Preheat oven to 350F. Grease a 9x5 loaf pan and set aside.

Peel pears. Chop the pears into 1/2 inch dice. Take 1/2 cup of the chopped pear and mash it well until it's basically pureed.

In a large bowl, mix together wheat flour, white flour, baking soda, baking powder, salt, and spices.

In a medium bowl, whisk together buttermilk, butter, eggs, maple syrup, and vanilla. Stir in chopped pears and pear puree. Pour the liquid ingredients into the dry ingredients and combine with a large spatula until just mixed together.

For streusel, add all remaining ingredients to a bowl and mix with your fingers until until well combined and there is no dry flour left.

Using the spatula, scrape the pear batter into the prepared loaf pan. Sprinkle the streusel over the top, patting it down to push it into the batter a little. This will help it adhere to the bread.

Bake the bread for 45 minutes at 350 degrees. Reduce the temperature to 325 degrees F and bake for 15 minutes more. Allow the bread to cool for 1 hour on a rack. Then run a butter knife around the edges and carefully take the bread out of the loaf pan.

  • 1 c fresh or frozen blueberries
  • 1/2 c sugar
  • 1/3 c flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 c butter, softened

Instructions

Combine, flour, sugar, milk butter, egg, baking powder, salt, and nutmeg. Beat on low speed for 1-2 minutes.

Stir in berries by hand. Spread batter into a greased and floured 8-inch pan.

Combine sugar, flour, cinnamon, and nutmeg. Cut in butter. Sprinkle over batter in pan.

Bake at 375 degrees for 55 minutes or until toothpick inserted in center comes out clean.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup unsalted butter (cold and cut into half inch cubes)
  • 2–4 tablespoons cold water
  • 1 cup half and half
  • 1/4 cup unsalted butter
  • 8 ounces bittersweet chocolate-chopped
  • 1 1/2 cups sugar
  • 3/4 cup cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 eggs
  • 3 egg yolks

Instructions

To make the crust: In a large bowl whisk together flour, sugar and salt.

Add butter and mix with a fork until it starts to look like a coarse meal.

Add 1 tablespoon of water at the time and continue mixing until a dough forms.

Wrap the dough with the plastic wrap and refrigerate for 2 hours.

Lightly greased 9-inch pie plate and preheat oven to 350 F.

Take the dough from refrigerator and roll out on a lightly floured work surface into a circle about 1/8 inch thick.

Transfer the dough to a pie plate and trim excess of a dough from edges.

To make the filling: In a bowl whisk together sugar, cocoa powder, flour, and salt.

Combine in a sauce pan half and half, butter, and chocolate and stir over a medium-low heat until it become smooth.( Let it cool a few minutes before you add it over dry ingredients and eggs)

Add eggs, egg yolks and chocolate mixture into dry ingredients and stir until well-combined

Transfer filling to pie crust in pan.

Bake 45 to 50 minutes (until the center is set and the edges start to crack)

Cool 10-15 minutes before serving.

Stuffed Green Peppers

Ingredients

  • 4 green peppers
  • 1 lb hamburger
  • 2 tablespoon onion
  • 1 tsps Salt
  • 1 c cooked rice
  • 15 oz tomato sauce
  • 3/4 c mozzarella

Instructions

Cook rice. Brown hamburger with onion.

Combine rice, hamburger, salt, and tomato sauce. Stuff mixture into green peppers in a 1.5 qt casserole dish.

Cook covered at 350 degrees for 45 minutes.

Uncover and cook 15 minutes.

Sprinkle with cheese.
