Ingredients

  • 4 green peppers
  • 1 lb hamburger
  • 2 tablespoon onion
  • 1 tsps Salt
  • 1 c cooked rice
  • 15 oz tomato sauce
  • 3/4 c mozzarella

Instructions

Cook rice. Brown hamburger with onion.

Combine rice, hamburger, salt, and tomato sauce. Stuff mixture into green peppers in a 1.5 qt casserole dish.

Cook covered at 350 degrees for 45 minutes.

Uncover and cook 15 minutes.

Sprinkle with cheese.

  • 2 eggs beaten
  • 2 T sugar
  • 2 c sour milk
  • 2 1/2 c flour

  • 1 tsp baking powder

  • 2 T oil or melted shortening

Instructions

Combine eggs and sugar. Add milk. Sift flour with the other dry ingredients; add to liquid. Add oil.

Ingredients

  • 12 oz beef flank steak or chicken
  • 1 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp ground red pepper
  • 1/4 tsp black pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 6 flour tortillas
  • 2 T oil
  • 1 c red or green pepper; cut into strips
  • 1/2 c onion; thinly sliced
  • 1/3 c tomato; chopped

Instructions

Slice meat into thin strips. Mix seasonings and sprinkle two thirds of the seasoning mixture over. Cover and chill 30 minutes.

Wrap tortillas tightly in parchment paper and heat in a 350 degree oven about 10 minutes.

Heat half of the oil and saute peppers, onion, and remaining seasoning.

Remove onion mix and cook meat in the same skillet with the remaining oil.

Return onion mix to skillet. Add tomato and cook and stir for one minute.

  • 2 eggs
  • 1 3/4 c milk
  • 1/2 c oil or melted butter

Ingredients

  • 4 oz butter
  • 1 c sugar
  • 1 egg
  • 4 oz Ghirardelli 100% cacao unsweetened chocolate
  • ½ c flour
  • 4 egg yolks
  • ⅓ c sugar
  • ⅓ c brown sugar
  • ¾ c evaporated milk
  • 1 ½ T cornstarch
  • 1 tsp vanilla
  • 1 ½ c cream
  • 1 c chopped toasted pecans
  • 1 c caramel sauce

To make the brownies, preheat oven to 350 degrees and grease and flour an 8-inch square pan. Melt chocolate and butter in double boiler and whisk until smooth. Whisk together sugar and egg, then stir in the chocolate mixture, then the flour. Bake 15 minutes. Once cool, cut into ½ inch squares.

To make the parfait, whisk together egg yolks and sugars. Whisk in the evaporated milk and then the cornstarch. Cook over medium heat, stirring constantly until thick, about 5 minutes. (If the mixture gets lumpy, briefly switch to a whisk until smooth again.) Place in a clean bowl and place plastic wrap directly on the surface. Refrigerate until cold. Whip the cream and fold it in.

Layer: 4 pieces of brownies, 2 tsp caramel sauce, 2 tsp pecans, 3 T parfait. Repeat layers once, then end with a third layer of brownie, caramel, and pecans.

Cover with plastic wrap. Refrigerate 30 minutes to overnight.

  • 1 cup white sugar
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1/3 cup sour cream
  • 2 large eggs
  • 1 stick butter
  • 2 cups peaches, peeled and diced
  • 3/4 cup chopped pecans

Preheat oven to 425°.

Mix sugar, baking soda, vanilla, sour cream, eggs and butter in a large mixing bowl with an electric mixer until smooth.

Add flour, peaches and pecans.

Stir just until moistened.

Spoon muffin batter into greased or sprayed muffin tins until almost full.

Sprinkle more chopped pecans over top of each muffin in pans.

Press pecans slightly into batter.

Bake in a preheated 425° oven for 5 minutes.

Adjust temperature to 350°.

Bake at 350° for 15-20 minutes or until a toothpick inserted in center comes out clean.

  • 1 onion; chopped
  • 2 tablespoon green pepper; chopped

  • 10 oz frozen mixed vegetables
  • 1 cup beef gravy
  • 1/4 cup Water
  • 1/3 cup Shortening
  • 1 3/4 cups flour
  • 2 1/2 tsps Baking Powder
  • 3/4 teaspoon Salt
  • 1 cup milk
  • 1/4 cup sesame seed

Cook and stir onion and green pepper in shortening in a 10-inch skillet until tender. Stir in beef, vegetables, gravy, and water. Heat about five minutes.

Pour into ungreased oblong baking dish (12x7.5 inches or 8x8 inches).

Cut shortening into flour, baking powder, and salt with a pastry blender. Stir in milk just enough to make a soft, sticky dough.

Drop dough by 12 spoonfuls into sesame seed, coating all sides, and then drop onto hot beef mixture.

Cook uncovered at 450 degrees for 15 to 20 minutes.

  • 5 eggs

  • 1 tablespoon Butter

  • 1/8 teaspoon pepper
  • 7/8 c milk
  • 3/4 c gruyere or swiss cheese; diced
  • 1 teaspoon mustard
  • 16 oz frozen broccoli, corn, and peppers
  • 3 oz ham; diced
  • 1/4 c gruyere or swiss cheese; shredded

Beat eggs and salt.

In a skillet, melt 1 T butter. Pour in egg mixture. Cook without stirring, until mixtrue begins to set on the bottom and around the edges. Using a large spoon or spatula, lift and fold partially cooked eggs so uncoooked portion flows underneath. Continue cooking over medium heat about four minutes or until eggs are cooked through but still glossy and moist. Remove from heat and set aside.

For sauce, melt butter. Stir in flour and pepper. Add milk. Cook and stir until thickened and bubbly. Add the 3/4 c cheese and the mustard, stirring until cheese is melted.

Stir vegetables and ham into the cheese mixture, then gently fold in eggs. Turn mixtrue into a baking dish. Cover and chill for 2 to 24 hours.

Bake covered at 350 degrees for 45 minutes, stirring after 15 minutes. After 45 minutes, stir again and sprinkle with shredded cheese. Bake about 5 minutes more or until cheese is melted.

One-Pan Cheesy Chicken, Broccoli, and Rice

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1/2 medium yellow onion; diced finely
  • 1 pound chicken breasts; cut in bite-sized pieces
  • 2 cloves garlic; minced
  • 1 teaspoon kosher salt
  • freshly ground black pepper
  • 1 cup uncooked rice
  • 2 1/2 cups broccoli florets; cut in bite-sized pieces
  • 2 1/2 cups chicken broth
  • 2 cups shredded extra sharp cheddar cheese

In a large skillet or pan, saute onions in two tablespoons of olive oil over medium heat. Season chicken with salt and pepper.

Once onions soften, increase the heat to medium high and add chicken to the pan.

Brown the chicken pieces and add the garlic. Cook for about 1 more minute.

Push chicken to one side of the pan and add additional tablespoon of olive oil to other side.

Add the uncooked rice in the olive oil and saute it for a couple of minutes.

Add the chicken broth to the pan and bring the mixture to a boil. Lower the heat to a simmer and cover the pan with a lid.

Cook chicken and rice mixture covered for about 12 minutes.

Sprinkle the broccoli evenly over the chicken and rice mixture and stir to combine.

Continue to cook covered another 8 minutes on low, or until broccoli and rice are both tender.

Remove from heat and stir in half a cup of cheese.

Sprinkle remaining cheese on top and cover with a lid, letting it sit for 1-2 minutes or until cheese has melted.
