Stir-Fried Shrimp and Broccoli

Ingredients

  • 1 pound fresh or frozen medium shrimp in shells and/or 12 ounces fresh or frozen scallops
  • ⅓ cup water
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar or 1 tablespoon cider vinegar
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons sugar
  • 1 tablespoon cooking oil
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup thinly bias-sliced carrot
  • 1 small onion, halved lengthwise and sliced
  • 1 cup sliced fresh mushrooms
  • 2 cups hot cooked rice or 8 ounces packaged dried vermicelli or fusilli, cooked and drained
  • ¼ cup cashews or sliced almonds, toasted

Thaw shrimp or scallops, if frozen. If using shrimp, peel and devein shrimp, leaving tails intact . If using scallops, cut any large scallops in half. Rinse shrimp or scallops; pat dry with paper towels. Set aside. In a small bowl combine water, soy sauce, vinegar, cornstarch, and sugar; set aside.

Heat oil in a wok or a12-inch skillet over medium-high heat. (Add more oil as necessary during cooking.) Cook and stir garlic in the hot oil for 15 seconds. Add broccoli, carrot, and onion. Cook and stir for 3 minutes. Add mushrooms; cook and stir for 1 to 2 minutes more or until vegetables are crisp-tender. Remove vegetables from wok with slotted spoon. Stir soy sauce mixture. Add to wok; cook and stir until slightly thickened and bubbly. Add shrimp or scallops; cook about 3 minutes or until shrimp or scallops are opaque. Stir in vegetables; heat through. Serve with rice or pasta and sprinkle with cashews.

Ingredients

  • 1 lb ground beef
  • 2 cloves garlic chopped
  • 1/2 lb italian sausage
  • 1 c onion chopped
  • 1 green pepper; chopped
  • 8 oz mushrooms; sliced
  • 30 oz mashed canned tomatoes
  • 30 oz tomato sauce
  • 6 oz tomato paste
  • 1 T sugar
  • 2 piece bay leaf
  • 1 T oregano
  • 1/2 T basil
  • salt
  • pepper
  • 1/2 lb mozzarella
  • 4 oz swiss cheese
  • 2 oz parmesan and/or romano cheese
  • 1 lb ricotta
  • parsley
  • 9 lasagne noodles

Saute beef, garlic, sausage, onion, green pepper, and mushrooms. Simmer together tomatoes, tomato sauce, tomato paste, sugar, bay leaves, oregano, basil, salt, and pepper for one hour (or longer).

Mix together the mozzarella, Swiss, and parmesan or Romano cheese. Mix parsley into ricotta. Boil lasagne noodles. Layer in a 9x13 inch pan : sauce, noodles, ricotta, cheese.

Bake at 350 degrees for 45 minutes.

Notes

The sauce is enough to make two pans of lasagne. I usually freeze half of it to use later.

Ingredients

  • 1 lb hamburger
  • 1 T butter
  • 1/4 c rice, uncooked
  • 2 c potatoes, sliced
  • 1 onion, sliced
  • 1 c sliced carrots
  • 1 tsp salt
  • 1 can tomato soup
  • 1 c hot water

Instructions

Brown hamburger in butter in a Dutch oven.

Layer the remaining ingredients on top of the hamburger. Cover and simmer for 25 minutes.

Uncover and simmer for 5 minutes longer.

Ingredients

  • 1 T butter
  • 1 T olive oil
  • 1/4 lb sliced green onions
  • 1 T minced shallots
  • 1/4 c white wine
  • 1/4 c chicken broth
  • 3/4 lb asparagus, cut into 3/4-inch pieces
  • 1 c peas
  • 1/2 lb campanelle or medium shell-shaped pasta
  • 3 oz sliced lettuce
  • 1/2 c grated parmesan
  • 1/4 c fresh parsley
  • 2 oz bacon cooked and chopped

Sprinkle onions and shallot with salt and pepper and saute in butter and oil for eight minutes. Add wine and simmer three minutes. Add broth and simmer.

Boil asparagus for two to four minutes. Remove from water with a slotted spoon and cook the peas in the same water about two minutes. Remove peas and cook pasta in the same water, reserving 1/2 cup cooking liquid when pasta is done.

Add lettuce to onion mixture and stir just until wilted, about one minute. Add asparagus and peas and heat through.

Add pasta, parmesan, and parsley. Toss, adding reserved liquid if dry. Season with salt and pepper. Transfer to a bowl, top with bacon, and drizzle with olive oil. Serve with additional parmesan.

  • 1 recipe pastry for a 9 inch double crust pie
  • 1 carrot, chopped
  • 1 head fresh broccoli chopped
  • 2 boneless chicken breast halves; cooked and chopped
  • 1 can (10.75 ounce) cream of chicken soup
  • 2/3 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt

Preheat oven to 425 degrees F (220 degrees C).

Steam carrots and broccoli in a covered pot for 3 minutes, until slightly tender but still firm.

In a large bowl, mix together carrots, broccoli, chicken, soup, milk, cheese, and salt. Spoon mixture into pastry-lined 9 inch pie pan and cover with top crust. Seal edges and cut steam vents in top.

Bake in preheated oven for 30 minutes, until golden brown.

Ingredients

  • 1 lemon
  • 2 tablespoon fresh dill; chopped
  • 1/2 cup mayonnaise
  • 1 teaspoon kosher salt
  • 1/2 tsps pepper
  • 1 lb ground lamb
  • 2 tsps oregano
  • 2 tablespoon olive oil

Finely grate the zest of 1 medium lemon into a large bowl and set aside. Juice the lemon and add 1 1/2 tablespoons of the juice to a small bowl. Finely chop 2 tablespoons fresh dill and add to the bowl. Add 1/2 cup mayonnaise, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper to the bowl and whisk to combine. Refrigerate until ready to use.

Add 1 pound ground lamb, 2 teaspoons dried oregano, remaining 3/4 teaspoon kosher salt, 1/4 teaspoon black pepper to the bowl of lemon zest. Work the mixture together with your hands until all the ingredients are evenly combined. Do not overwork.

Line a rimmed baking sheet with aluminum foil. Form the meat mixture into 18 (1 1/2-inch) meatballs (about 2 tablespoons each) and place on the baking sheet.

Heat 2 tablespoons extra-virgin olive oil in a large skillet over medium-high heat until shimmering. Working in batches if needed to make sure the pan is not crowded, add the meatballs and cook, turning every minute, until browned all over and cooked through, about 15 minutes total.

Serve with the sauce.

Notes

Make ahead: The meatballs can be formed and refrigerated up to 2 days in advance. The sauce can be made up to 3 days in advance.

Storage: Refrigerate leftovers in an airtight container for up to 3 days.

  • 8 oz small pasta shells
  • 1 lb shrimp, peeled and deveined; chopped
  • 1 cup frozen peas
  • 4 green onions; chopped
  • 1/4 cup fresh parsley; minced
  • 1 cup mayonnaise
  • 1 cup plain yogurt
  • 1/4 cup lemon juice
  • 2 tablespoon fresh dill
  • 1/2 teaspoon Salt
  • 1/4 teaspoon white pepper

Instructions

Cook pasta according to package directions. Drain; rinse with cold water and drain again.

In a large bowl, combine pasta, shrimp, peas, green onions and parsley. Mix remaining ingredients; stir into pasta mixture. Refrigerate, covered, at least 2 hours.

  • 4 oz cream cheese
  • 1/2 c grated parmesan
  • 3/4 cup milk
  • 1/4 c butter
  • 1/4 tsp white pepper
  • 1/8 tsp garlic powder
  • 8 oz fettuccine
  • 1/8 tsp ground nutmeg
  • 4 piece (4 oz) chicken breasts

Instructions

Melt together the cream cheese, parmesan cheese, milk, butter, white pepper, and garlic powder. Cook fettuccine noodles and toss with oil.

Grill the chicken breasts. To serve, top the noodles with the chicken, pour sauce over them, and sprinkle with nutmeg.

  • 1 c thick & chunky salsa
  • 1 can corn drained
  • 1 pkg macaroni and cheese
  • 1/2 c shredded cheese
  • 1 green onion sliced

Instructions

Brown meat. Add water and salsa. Bring to a boil, cover, and simmer 7 minutes.

Add corn and cheese packet; cook 2 minutes or until heated through and blended.

Add macaroni, cover, and simmer 3 minutes.

Sprinkle with shredded cheese and green onion.

  • 1 c onion
  • 1 clove garlic
  • 1 c water
  • 1 tsp salt
  • 1 tsp sugar (optional)
  • 1 tsp oregano
  • 3/4 tsp basil
  • 1/2 tsp marjoram
  • 1/4 tsp rosemary
  • 1 bay leaf
  • 8 oz tomato sauce
  • 6 oz tomato paste
  • spaghetti noodles

Instructions

1

Brown hamburger with onion and garlic.

2

Add remaining ingredients except noodles. Cover and simmer for one hour.

3

Cook spaghetti noodles and serve with sauce.
