Ingredients

  • 2 lbs ground beef
  • 1 c rolled oats
  • 1/4 c chopped onion
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1 egg beaten
  • 1 c milk
  • 1/3 c ketchup
  • 2 T brown sugar
  • 1 T mustard

Instructions

Heat oven to 350 degrees.

Combine beef, oats, onion, salt, pepper, egg, and milk. Pack firmly into glass loaf pan.

Combine ketchup, brown sugar, and mustard. Spread on top of the meat loaf.

Bake for 1 hour 15 minutes. Let stand 5 minutes before slicing.

Ingredients

  • 3 lb pork roast
  • 1 onion; chopped
  • 1 c vinegar
  • 1/2 c Worcestershire sauce
  • 1/2 c ketchup
  • 3 tablespoon brown sugar
  • 3 tablespoon mustard
  • 1 tsps Salt
  • 1/2 tsps red pepper
  • buns

Instructions

Place roast and onion in Dutch oven or slow cooker. Mix other ingredients and pour over roast. Bake at 325 for 3-4 hours or cook in slow cooker on low heat for 8-10 hours.

Shred meat and serve on buns.

Ingredients

  • 8 oz penne pasta
  • 1 egg
  • 1 c milk
  • 1 clove garlic
  • 3/4 onion
  • 5 oz shredded sharp cheddar cheese (1 c)
  • 5 oz cream cheese
  • 3 oz shredded gruyere cheese (2/3 c)
  • 1/8 tsp red pepper flakes
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp paprika
  • 3 T butter
  • 12 saltines; crumbled

Cook pasta. Preheat oven to 350 degrees. Grease a shallow 1.5 quart baking dish and add cooked macaroni.

In a blender or food processor, combine egg, milk, and garlic. Process for three seconds. Add onion, cheeses, peppers, salt, and paprika, and blend for 10 seconds.

Fold the cheese mixture into the macaroni.

Cover and refrigerate for up to 24 hours, or sprinkle with mixture of melted butter and crackers and bake right away. If refrigerating, bring to room temperature before baking.

Bake for 20 to 25 minutes at 350 degrees. Let stand 5 minutes before serving.

Ingredients

  • 4 c water
  • 1 c split peas
  • 1 lb ham hocks or ham bone
  • 3 potatoes, peeled and diced
  • 6 oz smoked sausage, sliced
  • 2 stalks celery
  • 2 leeks diced
  • 1/2 large onion, chopped
  • 1/2 c carrot, chopped
  • 1/2 tsp thyme
  • 1/4 tsp pepper
  • 1/2 tsp salt

Instructions

Soak peas in water overnight.

Add ham bone and simmer, covered, for two hours.

Remove ham bone from pot, slice meat from bone, cut in small pieces and return to pot. Add potatoes, sausage, vegetables, and seasonings. Simmer, uncovered, for at least two hours, until vegetables are tender.

  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 lb bottom round steak
  • 1 T shortening
  • 8 oz whole canned tomatoes
  • 1/2 c onion
  • 1/2 small green pepper
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions

Mix flour, salt, and pepper. Pound into beef. Cut beef into 4-6 pieces. Brown beef in shortening 15 minutes.

Add remaining ingredients. Cover and simmer 45 minutes.

  • 10 oz corned beef
  • 1 lb grated swiss cheese
  • 15 oz sauerkraut
  • 1 c mayonnaise
  • rye bread

Instructions

Mix corned beef, cheese, sauerkraut, and mayonnaise. Bake in a 2 1/2 quart casserole at 350 degrees for 30 minutes.

Serve on rye bread.

Ingredients

  • 2 T butter
  • 4 oz mushrooms; quartered
  • 3/4 c onion
  • 1 1/2 lb shrimp peeled and deveined
  • 8 oz sugar snap peas
  • 1 1/2 c half-and-half
  • 1/4 c white wine
  • 1/4 c flour
  • 1 tsp dill weed
  • 1/4 tsp thyme leaves
  • 1/2 tsp salt

Preheat oven to 400 degrees. Melt butter in a large skillet. Add mushrooms and onion; saute 2 minutes.

Add shrimp and sugar snap peas; saute until shrimp begins to turn pink, about 3-4 minutes.

Whisk together half and half, wine, flour, herbs, and salt. Add to skillet. Bring just to a boil over medium heat, stirring constantly. Simmer 2 minutes or until sauce thickens.

Pour into a 2-quart baking dish. Cut a layer of biscuit dough to cover the top.

Bake 11-13 minutes or until biscuit topping is golden brown.

Ingredients

  • 2 lbs chicken
  • 1/2 lb spaghetti
  • 1/2 c green pepper
  • 1/2 c onion
  • 8 oz mushrooms
  • 3/4 c butter
  • 2/3 c flour
  • 4 c milk
  • 1 tsp salt
  • 8 oz velveeta
  • 1 c crackers

Boil chicken.

Cut chicken into bite-sized pieces. Cool broth and remove fat. Cook spaghetti in 1 qt of the broth.

Saute green pepper, onion, and mushrooms in butter. Blend in flour. Gradually add milk and salt and cook and stir until thickened. Stir in cheese until melted.

Combine chicken, spaghetti, and sauce in a casserole. Top with crackers.

Bake for 30 minutes at 350 degrees.

  • 1 c onion; chopped
  • 1/2 c green pepper
  • 1/4 c celery
  • 2 cloves garlic
  • 1 T oil
  • 4 c tomatoes or 2 14 1/2 oz cans
  • 6 oz tomato paste
  • 2 T fresh parsley
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp marjoram
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 3/4 c soft bread crumbs
  • 1/4 c onion
  • 2 T green pepper
  • 1/4 tsp oregano
  • 1/4 tsp salt
  • 12 oz ground beef

Instructions

Cook onion, green pepper, celery, and garlic in oil.

Add tomatoes, tomato paste, parsley, basil, oregano, marjoram, sugar, salt, and pepper. Cover and simmer for 30 minutes, then uncover and simmer for 10 to 15 minutes.

Combine egg, bread crumbs, onion, green pepper, oregano, salt, and ground beef. Shape into meatballs. Bake at 350 degrees for 15 to 20 minutes.

Baked Pork Chops with Bourbon Glaze

Baked Pork Chops with Bourbon Glaze

Ingredients

  • BRINE
  • ▢1 quart warm water
  • ▢3 Tbsp kosher salt
  • ▢2 sprigs fresh rosemary (optional)
  • PORK CHOPS
  • ▢1 1/2 Tbsp vegetable oil
  • ▢4 boneless pork chops (thick cut, around 1 1/2 inches thick)
  • ▢1/2 tsp kosher salt
  • ▢1/2 tsp black pepper
  • ▢1/2 tsp smoked paprika
  • ▢1/2 tsp dried thyme
  • BOURBON GLAZE
  • ▢1/3 cup bourbon
  • ▢3 Tbsp soy sauce reduced sodium
  • ▢3 - 4 Tbsp light brown sugar packed
  • ▢2 Tbsp apple cider vinegar
  • ▢4 cloves garlic minced or grated
  • ▢1 tsp fresh ginger grated
  • ▢pinch of cayenne pepper
  • SLURRY
  • ▢1/2 Tbsp cornstarch
  • ▢1 Tbsp water

Combine all brine ingredients. Whisk until combined well. Add pork chops and brine to a marinade pan and refrigerate for at least 15 minutes, or up to 8 hours.

Add all bourbon glaze ingredients to a small saucepan and bring to a boil over MED heat, stirring occasionally. Once boiling, reduce heat to LOW and simmer for around 10 minutes, stirring occasionally.

Mix slurry ingredients (cornstarch and water) in a small bowl, then add to bourbon glaze and cook another 1-2 minutes, until thickened.

Preheat oven to 375 F degrees. Remove pork from brine, rinse with cold water, and pat very dry. Discard brine.

Season with 1/2 tsp EACH salt, pepper, smoked paprika and dried thyme.

Add vegetable oil to large oven-safe skillet and heat over MED-HIGH heat. Once pan is hot, add seasoned pork chops and cook, without flipping or moving, for 2-3 minutes.

Using tongs, flip pork chops over, and transfer skillet to the preheated oven. Bake 5 minutes, then flip pork chops back over, return to the oven and bake another 4 minutes, until pork is cooked to 145 F degrees (internal temperature).

Remove pork chops to a plate, and cover loosely with foil. Leave to rest for 5 minutes.

Brush or spoon a bit of sauce over the top of each pork chops, then serve with remaining sauce on the side.
