White Bean and Chicken Chili

- 2 T olive oil
- 1 c celery; chopped
- 1 c onion; chopped
- 1 c green pepper; chopped
- 2 T pickled jalapeno; chopped
- 4 cloves garlic
- 2 T chili powder
- 2 tsp cumin
- 2 c chicken broth
- 30 oz canned great northern beans drained
- 1 lb chicken breast cooked and diced
- 1/2 c half - and - half
Instructions

Heat oil over medium heat. Add celery, onion, pepper, and jalapeno; saute until beginning to soften, about 4 minutes.

Add garlic, chili powder, and cumin. Saute 1 minute.

Add broth and bring to a boil. Reduce heat and simmer until vegetables are crisp - tender, about 3 minutes.

Add beans, chicken, and half - and - half. Bring to a boil, reduce heat, and simmer until heated through, about 5 minutes. Season with salt and pepper.
