Ingredients

  • 4 green peppers
  • 1 lb hamburger
  • 2 tablespoon onion
  • 1 tsps Salt
  • 1 c cooked rice
  • 15 oz tomato sauce
  • 3/4 c mozzarella

Instructions

Cook rice. Brown hamburger with onion.

Combine rice, hamburger, salt, and tomato sauce. Stuff mixture into green peppers in a 1.5 qt casserole dish.

Cook covered at 350 degrees for 45 minutes.

Uncover and cook 15 minutes.

Sprinkle with cheese.

Ingredients

  • 2 eggs beaten
  • 2 T sugar
  • 2 c sour milk
  • 2 1/2 c flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 T oil or melted shortening

Instructions

Combine eggs and sugar. Add milk. Sift flour with the other dry ingredients; add to liquid. Add oil.

Ingredients

  • 12 oz beef flank steak or chicken
  • 1 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp ground red pepper
  • 1/4 tsp black pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 6 flour tortillas
  • 2 T oil
  • 1 c red or green pepper; cut into strips
  • 1/2 c onion; thinly sliced
  • 1/3 c tomato; chopped

Instructions

Slice meat into thin strips. Mix seasonings and sprinkle two thirds of the seasoning mixture over. Cover and chill 30 minutes.

Wrap tortillas tightly in parchment paper and heat in a 350 degree oven about 10 minutes.

Heat half of the oil and saute peppers, onion, and remaining seasoning.

Remove onion mix and cook meat in the same skillet with the remaining oil.

Return onion mix to skillet. Add tomato and cook and stir for one minute.

  • 1 3/4 c milk

Ingredients

  • 1 onion; chopped
  • 2 tablespoon green pepper; chopped

  • 2 cups cooked beef; cut into bite-size pieces
  • 10 oz frozen mixed vegetables
  • 1 cup beef gravy
  • 1/4 cup Water
  • 1/3 cup Shortening
  • 1 3/4 cups flour
  • 2 1/2 tsps Baking Powder
  • 3/4 teaspoon Salt
  • 1 cup milk
  • 1/4 cup sesame seed

Instructions

Cook and stir onion and green pepper in shortening in a 10-inch skillet until tender. Stir in beef, vegetables, gravy, and water. Heat about five minutes.

Pour into ungreased oblong baking dish (12x7.5 inches or 8x8 inches).

Cut shortening into flour, baking powder, and salt with a pastry blender. Stir in milk just enough to make a soft, sticky dough.

Drop dough by 12 spoonfuls into sesame seed, coating all sides, and then drop onto hot beef mixture.

Cook uncovered at 450 degrees for 15 to 20 minutes.

Ingredients

  • 5 eggs
  • 1/8 teaspoon Salt
  • 1 tablespoon Butter
  • 1 1/2 tablespoon Butter
  • 1 1/2 tablespoon flour
  • 1/8 teaspoon pepper
  • 7/8 c milk
  • 3/4 c gruyere or swiss cheese; diced
  • 1 teaspoon mustard
  • 16 oz frozen broccoli, corn, and peppers
  • 3 oz ham; diced
  • 1/4 c gruyere or swiss cheese; shredded

Beat eggs and salt.

In a skillet, melt 1 T butter. Pour in egg mixture. Cook without stirring, until mixtrue begins to set on the bottom and around the edges. Using a large spoon or spatula, lift and fold partially cooked eggs so uncoooked portion flows underneath. Continue cooking over medium heat about four minutes or until eggs are cooked through but still glossy and moist. Remove from heat and set aside.

For sauce, melt butter. Stir in flour and pepper. Add milk. Cook and stir until thickened and bubbly. Add the 3/4 c cheese and the mustard, stirring until cheese is melted.

Stir vegetables and ham into the cheese mixture, then gently fold in eggs. Turn mixtrue into a baking dish. Cover and chill for 2 to 24 hours.

Bake covered at 350 degrees for 45 minutes, stirring after 15 minutes. After 45 minutes, stir again and sprinkle with shredded cheese. Bake about 5 minutes more or until cheese is melted.

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1/2 medium yellow onion; diced finely
  • 1 pound chicken breasts; cut in bite-sized pieces
  • 2 cloves garlic; minced
  • 1 teaspoon kosher salt
  • freshly ground black pepper
  • 1 cup uncooked rice
  • 2 1/2 cups broccoli florets; cut in bite-sized pieces
  • 2 1/2 cups chicken broth
  • 2 cups shredded extra sharp cheddar cheese

Instructions

In a large skillet or pan, saute onions in two tablespoons of olive oil over medium heat. Season chicken with salt and pepper.

Once onions soften, increase the heat to medium high and add chicken to the pan.

Brown the chicken pieces and add the garlic. Cook for about 1 more minute.

Push chicken to one side of the pan and add additional tablespoon of olive oil to other side.

Add the uncooked rice in the olive oil and saute it for a couple of minutes.

Add the chicken broth to the pan and bring the mixture to a boil. Lower the heat to a simmer and cover the pan with a lid.

Cook chicken and rice mixture covered for about 12 minutes.

Sprinkle the broccoli evenly over the chicken and rice mixture and stir to combine.

Continue to cook covered another 8 minutes on low, or until broccoli and rice are both tender.

Remove from heat and stir in half a cup of cheese.

Sprinkle remaining cheese on top and cover with a lid, letting it sit for 1-2 minutes or until cheese has melted.

Ingredients

  • 3 eggs
  • 1 1/4 c milk
  • 1/4 c dry bread crumbs
  • fresh parsley
  • 1 lb ground beef
  • 1 cup beef broth
  • 4 oz can mushrooms
  • 1/2 c onion
  • 8 oz sour cream
  • 2 c & 2 t flour
  • 1/2 tsp caraway seeds

Combine 1 slightly beaten egg, ¼ c milk, bread crumbs, 1 T parsley, ½ tsp salt, and 1/4 tsp pepper. Add ground beef and shape into 1 ½-inch meatballs (about 24). Brown, then add broth, mushrooms, and onion; simmer covered 20 min.

Combine sour cream, 2 T flour, and caraway seeds. Stir into broth and cook and stir until thickened; cook 1 min longer.

Combine 2 c flour and 1 tsp salt. Add 2 eggs and 1 c milk and beat well. Allow it to rest 5-10 min.

Bring a large pot of water to boiling. Add spaetzle batter as for soup dumplings. Cook and stir 5 min. Drain and sprinkle with snipped parsley.

Ingredients

  • 1 tsp yeast
  • 1/2 c warm water
  • 2 T olive oil
  • 1/2 tsp sugar
  • 1/2 tsp italian seasoning
  • 1/4 tsp salt
  • 1 1/2 c flour
  • 2 tsp cornmeal
  • 1 clove garlic
  • 1 tsp basil
  • 1 c chicken; cooked and cubed
  • 1 plum tomato; sliced
  • 1 oz black olives; sliced
  • 2 oz shredded mozzarella cheese
  • 1 T grated parmesan cheese

Instructions

For crust dough, dissolve yeast in warm water, add 1 T oil, sugar, Italian seasoning, salt, and 1 c flour. Mix well, then stir in enough of the remaining flour to form a soft, sticky dough. Knead 6-8 minutes, turn in a greased bowl, cover, and let rise 40 minutes.

Sprinkle cornmeal over a greased 12-inch pizza pan. Roll dough into a 13-onch circle and transfer to the pan, building up the edges. Cover and let rise 40 minutes.

Brush with 1 T olive oil and sprinkle with garlic and basil. Top with chicken, tomatoes, olives, and cheeses. Bake at 400 degrees for 22 to 26 minutes.

Ingredients

  • 1 lb hamburger
  • 1 small onion
  • 4 cups pinto beans
  • 2 tsps chili powder
  • 1 cup Tomato paste
  • hot pepper
  • 4 1/2 cups flour
  • 3 1/2 tsps Baking Powder
  • 2 tsps Salt
  • 2 tsps Shortening; melted
  • lettuce
  • tomato
  • cheese

Instructions

For fry bread, mix flour, baking powder, salt and shortening. Add water and mix to make a soft dough. Allow the dough to rise for an hour.

Fry hamburger and onion, then add the beans, chili powder, tomato paste, and hot peppers (to taste). Season with salt and pepper.

Cut up lettuce and tomatoes. Grate cheese.

4

Divide fry bread dough into pancake-sized portions. Deep fry on both sides.
