Ingredients

  • 15 egg roll wraps
  • 3/4 lb ground pork
  • 2 tsps fresh ginger; chopped
  • 2 cloves garlic; minced
  • 1 tsp Salt
  • 1 tsp sugar
  • 1/4 c soy sauce
  • 1 tsp sesame oil
  • 12 oz cabbage and carrot cole slaw mix
  • 4 green onions; sliced
  • 1 egg; beaten
  • 1 tsp Water
  • oil

Instructions

Brown pork with ginger and garlic in pan; drain any grease.

Mix salt, sugar, soy sauce and sesame oil. Add to pork and mix well.

In large bowl combine cabbage mix and green onions.

Pour hot meat over vegetables and stir well. Let cool slightly.

Lay wrap in front of you so that it looks like a diamond. Place 1/4 c pork filling in center of egg roll wrapper. Fold bottom point up over filling and roll once. Fold in right and left points. Brush beaten egg on top point. Finish rolling. Set aside and repeat with remaining filling.

Heat 2-3 inches oil in large frying pan to very hot (350ºF). Fry a few egg rolls in pan at a time, 2-3 minutes per side.

Drain on paper towels. Serve with sweet and sour sauce, plum sauce, hoisin sauce or jalapeño pepper jelly.

Ingredients

  • 2 lbs ground beef
  • 1 c oats
  • 1/4 c onion; chopped
  • 2 tsp salt
  • 1 1/3 c tomato juice
  • 1 egg
  • 1/4 c ketchup
  • 2 T brown sugar
  • 1/2 tsp mustard

Instructions

Combine all ingredients except ketchup, brown sugar, and mustard. Pack firmly into an ungreased loaf pan.

Mix the ketchup, brown sugar, and mustard, and spread this sauce over the meat. Bake in a preheated oven at 350 degrees for 1 hour and 15 minutes. Let stand 5 minutes before slicing.

Ingredients

  • 2 large onions, sliced
  • 5 lb pork shoulder roast
  • 2 T roasted garlic and herb seasoning
  • 1 tsp salt
  • 2 c chicken broth

Instructions

Grease slow cooker. Place onions in the bottom.

Rub seasoning blend and salt into the pork roast. Place it on top of the onions and pour chicken broth over it.

Cover and cook on low for 10 hours.

Ingredients

  • 4 spears asparagus per serving
  • 4 slices shaved deli ham per serving
  • 2 Tablespoons butter per serving, melted
  • 1/4 cup grated parmesan per serving

Instructions

Steam asparagus five minutes.

Wrap each spear in a slice of ham.

Arrange seam sides down, close together, in a shallow baking dish greased with a little of the butter. Sprinkle with half the remaining butter, then the cheese, then the rest of the butter.

Bake 10 min at 450 degrees.

Ingredients

  • 1 c sugar
  • 1/2 c shortening
  • 2 eggs
  • 1/2 c milk
  • 1 teaspoon soda
  • 1 teaspoon vanilla
  • 2 teaspoons cream of tartar
  • 3 c flour

Instructions

Boil dates for filling (equal parts dates, sugar, and water, plus 2 tsp tapioca for each cup of dates).

Mix together all ingredients for dough. Roll out thin, fill with date filling, and seal.

Bake at 375 degrees for 12-14 minutes.

Ingredients

  • 6 c green beans
  • 1/2 c onion
  • 1 T butter
  • 8 oz sour cream
  • 2 T flour
  • 1/2 tsp lemon peel; finely shredded
  • 1/4 tsp pepper
  • 2 oz velveeta shredded
  • 1/3 c fine dry bread crumbs
  • 1 T butter; melted

Instructions

Cook beans, if fresh or frozen.

Cook onion in butter until tender.

Stir together sour cream, flour, lemon peel, and pepper; stir in beans and onion.

Transfer to a two - quart baking dish. Top with cheese. Combine bread crumbs and melted butter and sprinkle on top.

Bake for 30 minutes at 350 degrees.

Ingredients

  • roasting chicken
  • carrot sliced
  • onion sliced
  • bay leaf
  • 1 tsp salt
  • 6 black peppercorns
  • 6 T butter
  • 6 mushrooms
  • 2 T flour
  • 1/2 c cream
  • freshly ground black pepper
  • 12 oz puff pastry thawed
  • 1 egg yolk beaten

Instructions

Put chicken, carrot, onion, bay leaf, salt, and peppercorns into a large pot. Cover with water and bring to a boil, skimming occasionally. Simmer gently for 20 minutes. Allow chicken to cool in stock for one hour. Remove meat from bones and cut into large chunky pieces. Place meat in a pie dish and cover with a little stock to keep the flesh moist. Return bones to stock and boil for 10 to 15 minutes to reduce it.

Strain the stock and leave it to cool. Reserve 1 1/2 c; the rest can be refrigerated or canned.

Melt 1 T butter in a small skillet and saute the mushrooms over high heat. Add the mushrooms to the chicken.

Melt the remaining butter and blend in flour. Add the reserved chicken stock, blending to make a smooth sauce. Stir in cream and season with salt and pepper.

Spoon the sauce over the chicken and mushrooms. Roll out pastry to fit the pie plate. Remaining pastry can be cut into strips and braided around the rim of the pie plate. Brush the top of the pie with beaten egg yolk.

Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 20 minutes more.

Torin nicknamed this "Souper Fire Pie" when he was a toddler.

Ingredients

  • 6 pieces chicken
  • 1 c rice
  • 1 pkg onion soup mix
  • 1 can mushroom soup
  • 1 can chicken broth or water

Instructions

Butter a 9x13 inch pan. Put rice in the pan.

Mix together the onion soup mix, mushroom soup, and chicken broth. Spread half of the mixture over the rice. Lay chicken on top and cover with the remaining soup mixture.

Cover and bake for two hours at 325 degrees.

Molten Chocolate Cake with Candied Walnuts

Ingredients

  • 6 oz semisweet chocolate
  • 2 oz bittersweet chocolate
  • 3/4 cup unsalted butter
  • 3 egg yolks
  • 3 eggs
  • 3/4 cup sugar
  • 3/4 cup flour
  • 3 cups walnuts; toasted
  • 1 3/4 cup sugar
  • 1 pinch kosher salt

For the Cake: Butter 8 six-ounce ceramic ramekins and dust with flour.

In a bowl over a double-boiler melt the butter and chocolate, set aside and let cool.

In a mixing bowl, use electric mixer to combine eggs and sugar until pale yellow butter holds shape and forms ribbon on beaters. Blend flour into egg-sugar mixture with the mixer for 3 minutes. Add chocolate mixture, being careful to incorporate everything; mix for 2 more minutes.

Pour about 6 ounces of batter into each ramekin and refrigerate for 1 hour.

In a preheated 475°F (245°C) oven, bake ramekins on a cookie sheet for 10 to 12 minutes or until they are puffed up and don't jiggle when moved.

Remove from oven and serve immediately.

For the Walnuts: Cook sugar until melted and slightly amber colored. Mix walnuts, sugar and salt together; being sure to coat the nuts. Cool on a non-stick surface such as a Silpat or bakers paper.

Notes

Can be served with chocolate sauce or whipped cream.

Ingredients

  • 1 quart canned carrot slices (or 4 c cooked carrots)
  • 1 medium onion; diced
  • 1 tablespoon Butter
  • 1 10.75-oz can cream of celery soup
  • 2/3 c Velveeta; cubed

Instructions

1

Saute onion in butter until tender. Add soup and cheese; stir until smooth.

Drain carrots and combine with cheese mixture in a 1-quart baking dish.

Cover and bake at 350 degrees for 15 to 20 minutes or until heated through.
