Three Cheese Manicotti

Three Cheese Manicotti

Serves: 7 Prep Time: 1 hour Cooking Time: 40 minutes

Ingredients

  • 1/4 c onion; chopped
  • 1 clove garlic; minced
  • 1 T olive oil
  • 1 pint tomatoes
  • 8 oz tomato sauce
  • 1 tsp sugar
  • 1 tsp oregano
  • 1/4 tsp thyme
  • 1 bay leaf
  • 7 manicotti
  • 2 eggs beaten
  • 2 c mozzarella; shredded
  • 1 1/2 c ricotta
  • 1/2 c parmesan
  • 1/4 c fresh parsley
  • 1/2 tsp oregano
  • 1/8 tsp pepper

Instructions

Cook onion and garlic in oil until tender but not browned.

Add undrained tomatoes, tomato sauce, sugar, oregano, thyme, and bay leaf. Simmer for 20 to 25 minutes.

Cook manicotti and rinse with cold water.

Stir together eggs, half the mozzarella, the other cheeses, parsley, oregano, and pepper.

Pour half of the tomato sauce into an 8x11inch pan. Fill manicotti with the cheese and arrange them in the pan. Pour the remaining sauce over the manicotti and sprinkle the remaining 1 c mozzarella on top.

Chill up to 24 hours before baking, or bake right away. Bake for 35 to 40 minutes at 350 degrees.

Ingredients

  • 16 ounce bowtie pasta, cooked and drained in; cold water
  • 1 jar (7 oz) sun-dried tomatoes in oil; drained
  • 1 red bell pepper; diced
  • 1 can (6.5 oz) black olives; sliced
  • 1/4 cup basil; chopped
  • 1/2 cup grated parmesan cheese
  • 3/4 cup olive oil
  • 2 tablespoons white vinegar
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1 teaspoons sugar
  • 1 teaspoon dry oregano
  • 1 teaspoon dry basil
  • 1 clove garlic
  • black pepper to taste

Instructions

In a large bowl combine pasta, sundried tomatoes, bell pepper, olives, spinach, basil, and parmesan cheese. Toss until combined.

To make the dressing: In a small bowl whisk olive oil, vinegar, water, salt, sugar, oregano, basil, garlic and salt and pepper.

Drizzle the dressing over the pasta salad and serve.

Ingredients

  • 2 c potatoes, thinly sliced
  • 1/2 tablespoon onion, chopped
  • 1/2 tsps Salt
  • 1/8 tsps pepper
  • 1/2 tsps parsley
  • 1 lb ground beef
  • 3/4 c evaporated milk
  • 1/2 c cracker crumbs
  • 1/4 c catsup
  • 1/4 c onion, chopped
  • 1 tsps Salt
  • 1/8 tsps pepper

Instructions

Layer potatoes, onion, salt, pepper, and parsley in a 1.5-quart casserole.

Mix remaining ingredients together and spread over potatoes. Top with more catsup. Bake 1 hour at 350 degrees.

  • lettuce
  • cooked ham, chicken, or turkey
  • cubed swiss, cheddar, provolone, or; crumbled bleu cheese
  • hardboiled eggs
  • tomato wedges or cherry tomatoes
  • green pepper sliced
  • croutons optional

Instructions

Chop all ingredients and layer or put in separate bowls for each person to assemble their own choices.

Serve with salad dressing.

Beef Tenderloin Medallions with Potato Risotto

Ingredients

  • 1 T butter
  • 1 c chopped onion
  • 1 lb potatoes cubed
  • 1/8 tsp cayenne pepper
  • coarse salt
  • 1 1/2 c chicken broth
  • 1/2 c cream
  • 1/4 c grated parmesan cheese
  • 1/4 c chopped chives
  • 6 6-oz steaks
  • 1 1/2 T fresh thyme
  • 1 T olive oil

Instructions

Melt butter, add onion, and cook until soft and translucent, about 7 minutes.

Add potato cubes and cayenne pepper; sprinkle with coarse salt and pepper. Add chicken broth; bring to a boil. Reduce heat and simmer until potatoes are almost tender, about 8 minutes, adding more chicken broth by tablespoons if dry. (Mixture should be creamy with some sauce, not dry.)

Add cream and simmer until potatoes are tender but still hold their shape, stirring often, about 10 minutes.

Stir in cheese and chives.

(Can stand at room temperature up to 2 hours. Rewarm over medium heat, stirring often.)

Sprinkle steaks with salt, pepper, and chopped thyme.

Heat 1 T olive oil in a large skillet over medium-high heat.

Add steaks and cook to desired doneness, adding more oil as needed, 3-4 minutes per side.

Ingredients

  • 2 tablespoon mayonnaise
  • 2 tablespoon buttermilk
  • 1/2 green onion, chopped
  • 1 tsps fresh parsley, chopped
  • 1/4 tsps garlic salt
  • 1/4 tsps lime juice
  • 8 large shrimp, peeled, deveined
  • 8 slices thin pancetta or bacon

Instructions

For dressing, blend together mayonnaise, buttermilk, green onion, parsley, garlic salt, and lime juice. Cover and chill at least one hour.

Wrap a slice of pancetta around each shrimp. Thread shrimp onto skewers. Brush with oil and sprinkle with pepper. (Can be made 4 hours ahead; cover and chill.)

Grill about six minutes. Serve with dressing.

  • pepper
  • 2 c gravy
  • 12 oz corn
  • 6 potatoes; boiled and mashed
  • 1 lb ground beef
  • salt
  • onion
  • sage
  • oregano
  • thyme

Instructions

Brown the hamburger with the onion. Add seasonings.

Layer hamburger, gravy, and corn in a 2 1/2 quart casserole. Spread mashed potatoes over the top.

Bake for 45 minutes at 325 degrees.

By Serves: 4 Prep Time: 2 1/4 hours Cooking Time: 25 minutes

Ingredients

  • 4 piece chicken breast halves; cut into 3/4-inch cubes
  • 1 T soy sauce
  • 1 T dijon mustard
  • 1 T brown sugar
  • 1 T sherry or whiskey
  • 1 T olive oil
  • 2/3 c uncooked rice or pita bread
  • 1 piece red or green pepper

Instructions

Combine all ingredients except pepper and chicken in a shallow dish. Add chicken pieces and marinate, covered, for at least 2 hours, or overnight. Soak skewers in water. Cut pepper into 3/4-inch squares.

Drain chicken, reserving marinade. Thread pieces of pepper and chicken alternately on 8 skewers.

Cook rice, if serving with rice. Grill skewers 5-10 minutes, turning and basting with reserved marinade.

Serve with rice or pita bread.

  • 1 egg
  • 2 T sugar
  • 2 T lemon juice
  • 1/2 c whipped cream
  • 1 c grapes
  • 1 can pineapple
  • 1 can mandarin oranges
  • 1 banana
  • 1 c mini marshmallows
  • 1 T butter

Instructions

Combine beaten eggs, sugar, and lemon juice in a small pan. Cook, stirring constantly until boiling. Remove from heat and add butter. Allow to cool.

When cool, add whipped cream, grapes, pineapple, mandarin oranges, bananas, and marshmallows.

Ingredients

  • 5 oz unsweetened chocolate
  • ½ c unsalted butter, diced
  • 2 c sugar
  • 2 tsp vanilla
  • 4 eggs
  • ¼ tsp salt
  • 1 c flour
  • 2 ½ c flour
  • 1 tsp baking soda
  • ¼ tsp fine sea salt
  • 1 c unsalted butter
  • 1 c brown sugar
  • ½ c sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 c walnuts, broken into ½-inch pieces

Instructions

First, make the brownies. Preheat oven to 350. Line a 9x13 pan with foil, leaving overhand. Melt chocolate and butter together in double boiler. Cool 15 min.

Whisk sugar and vanilla into chocolate, then whisk in eggs and salt, then stir in flour. Spread in pan and bake until tester inserted in center comes out with moist crumbs attached, about 20 minutes. Cool in pan; cover and chill overnight.

Cut half the brownies into 1/2-inch cubes.

To make the cookies, preheat oven to 350. Line 2 large rimmed baking sheets with parchment. Whisk together flour, soda, and salt. Beat butter and sugars until smooth. Beat in eggs and vanilla. Stir in dry ingredients, then walnuts. Gently fold in brownie cubes. Drop by large scoops onto baking sheets, spacing 2 inches apart. Flatten mounds to 1-inch thickness. Bake until just golden, 18-20 min.
