Ingredients

  • 2 ¼ c flour
  • ¾ c sugar
  • ¼ tsp baking powder
  • ½ tsp salt
  • 1 c shortening
  • 1 egg
  • 1 tsp vanilla

Instructions

Sift together 2 c of the flour, sugar, baking powder, and salt.

Cut in shortening until fine.

Measure egg into measuring cup and add water to make ¼ c. Add egg and vanilla and beat mixture well.

Add additional flour if needed. Press through cookie press onto ungreased baking sheets.

Bake at 375 degrees for 10-12 min. Remove immediately.

Ingredients

  • 1/2 c shortening
  • 1 c sugar
  • 1 egg
  • 3/4 c buttermilk
  • 2 c flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla

Instructions

Cream shortening, sugar, and eggs. Add buttermilk and flour. Add remaining ingredients and mix well.

Bake until lightly browned.

Cool and frost with a cream frosting.

Creamy Strawberry Crepes

Ingredients

  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 3 tablespoons butter melted
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 8 oz cream cheese; softened
  • 1 1/4 cups sifted confectioners’ sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream whipped
  • 4 cups sliced strawberries

Instructions

Place the eggs, milk, water, melted butter, flour, and salt in the pitcher of a blender; blend until smooth.

Heat a lightly oiled griddle or non-stick skillet over medium heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Flip over when the batter is set and the edges are beginning to brown. Cook until the other side begins to brown. Stack finished crepes on a plate, cover with a damp towel and set aside.

Blend the cream cheese, confectioners’ sugar, lemon juice, lemon zest, and vanilla with an electric mixer until smooth. Gently fold in the whipped cream.

To serve, fill each crepe with 1/4 cup sliced strawberries and 1/3 cup of the cream cheese filling, roll up and top with a small dollop of the cream cheese filling and more sliced strawberries.

Ingredients

  • 2 c pretzels; crushed
  • 3/4 c butter melted
  • 16 oz cream cheese
  • 1 c sugar
  • 4 c cool whip
  • 6 oz strawberry jello
  • 2 c pineapple juice
  • 10 oz frozen strawberries

Combine pretzels and butter. Pat in a 9x13 inch pan. Bake 10 minutes at 400 degrees.

Mix cream cheese with sugar, and then fold in Cool Whip. Spread over cooled pretzel crust.

Dissolve jello in boiling pineapple juice. Add frozen strawberries and stir until it begins to gel. Spoon over cream cheese layer and chill.

Ingredients

  • 2 1/4 c flour
  • 1 tsp baking soda
  • 1 c butter
  • 3/4 c brown sugar
  • 1/4 c white sugar
  • 1 pkg pudding mix
  • 1 tsp vanilla
  • 2 eggs
  • 3/4 c chocolate chips

Instructions

Combine flour and baking soda; set aside.

Mix the butter, brown sugar, white sugar, pudding mix, and vanilla.

Beat until creamy. Add the eggs and mix well. Gradually stir in the flour mixture. Stir in the chocolate chips.

Drop by teaspoons onto ungreased baking sheets.

Bake at 375 degrees for 8-10 minutes.

Sticky Toffee Pudding

Ingredients

  • 12 oz pitted chopped dates
  • 1 c boiling water
  • ½ c butter
  • 1 ½ c brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 ¾ c flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ¼ c cream
  • ½ c sugar
  • ¼ c butter
  • ¼ c corn syrup

Instructions

Pour boiling water over dates, stir, and let cool.

Preheat oven to 350. Grease and flour a 9x9 pan. Beat butter until fluffy. Add brown sugar, then eggs 1 at a time, then vanilla. Sift together remaining ingredients and add in four parts, alternating with date mixture.

Bake about 40 minutes, then spoon ½ c toffee sauce over cake and bake another 8 minutes.

For sauce, combine ¾ c cream with other ingredients and boil and stir until sugar dissolves and butter melts. Simmer until mixture is thick and deep amber, stirring often, about 35 minutes.

Remove from heat and whisk in the remaining ½ c cream.

Notes

Sauce can be made three days ahead and refrigerated.

  • 2 eggs
  • 2 teaspoons baking soda
  • 1/2 cup milk
  • 2 cups cake flour
  • 1 teaspoon vanilla
  • 1 cup boiling water

Instructions

Cream shortening and sugar

Add eggs and beat well

Dissolve soda in milk and add it alternately with the flour

Dissolve cocoa in the boiling water

Add cocoa mixture and vanilla to the batter

Pour into cake pans

Bake at 350 degrees for 30 minutes
